    INGREDIENTS
    1 large eggplant
    1 litre cold water
    1 tbsp salt
    1 1/2 cups of vegetable oil
    2 large eggs

    400g peeled canned plum tomatoes (without seeds)
    250g of buffalo mozzarella alternatively use: smoked mozzarella
    1 cup of grated parmesan
    Handful of fresh basil leaves
    3 tbsp olive oil
