- 這是一個很好玩的食譜,因為不同油溫,炸出來的麵筋口感大有不同
炸麵筋,我做過不少於10次,雖然不算多,但每次都有新的體驗,頭幾次,以為自己炸得已經很好,但最近兩次才讓自己發現,之前的只是炸得起,有一種死韌,煮半天不入味😅
This is a fun recipe because the gluten tasting very different when you fry it at different oil temperatures
I have made gluten no less than 10 times. Although it is not too many, I have a new experience every time. The first few times, I thought I had fried it well, but only the last two times I realized that the previous one was only It can be fried, it has only a kind of toughness, and it will not taste delicious even cook already long time 😅

我依家差唔多已經唔開油鍋,除咗做麵筋,個女又鐘意食😎 每次用500克洗,根本唔夠食😅 係最近呢兩次先用1000克,咁就好少少,起碼我自己有份食🤣🤣

我煮食冇咩要求,最緊要佢兩個鐘意食,特別係個女,只要佢食得好,我點都煮比佢
尤其是係依家呢種咁嘅環境氣氛,今日唔知聽日事,做到嘅盡量做就交晒差啦

如果用高筋粉, 會唔會多啲麵筋? 我意思係用高筋粉, 會有多啲麵筋, 因為都係同一做法?😃

我之前試過用高筋洗,其實出嚟都係多大概80克麵筋,我亦試過同樣用中筋,麵筋洗出嚟有時都會少咗,有次仲少咗成50克,所以對我嚟講,中、高筋冇太大分別
而且我屋企長期都只係存中筋麵粉,所以就用咗中筋,你見我所有食譜都係用中筋㗎咋,因為只要份量控制得當,我覺得出嚟效果都冇太大分別
我酸甜齋同咖哩齋條片其實已經做好咗,只係等星期五就放出嚟
我住山卡啦,唔自己做就冇得食㗎喇🙈我咁為食,就要落手做啦😬

炸出來還沒吃放冰箱還是外面就好??外面買的臭油味
我每次做好後,即日已經吃完了!沒機會放入冰箱.....
請問加500-550克水嘅水溫重要嗎?溫水或室溫水?
這個水温不重要,用普通的室溫水温度就可以了!
