  • Kadai Paneer Masala
    Ingredients:
    4 teaspoons coriander seeds
    1 teaspoon cumin seeds
    1 teaspoon fennel seeds
    4 dry red chilies
    1 teaspoon salt
    Instructions:
    Toast the Spices:
    Place all the ingredients in a medium-hot pan.
    Cook the spices on low heat, stirring occasionally, until they turn golden brown.
    Cool and Grind:
    Remove the pan from heat and allow the spices to cool.
    Once cooled, coarsely grind the mixture using a spice grinder or mortar and pestle.
    Kadai Paneer Ingredients:
    For the Gravy:
    450g paneer, cubed
    1 large onion, finely chopped
    400 Grams medium tomatoes, pureed
    1-2 green bell peppers (capsicum), Diced
    2-3 Green Think (Non Spicy) chilies, Sliced
    4 Cloves Garlic
    1 Knob Ginger
    4 Green Chilli
    1/2 teaspoon Kashmiri Red Chili Powder (adjust to taste)
    2 tablespoons oil or ghee
    Salt to taste
    Fresh Coriander Leaves & Ginger for garnish
    Kadai Paneer Recipe
    Ingredients:
    For the Gravy:
    450g paneer, cubed
    1 large onion, finely chopped
    400g medium tomatoes, pureed
    1-2 green bell peppers (capsicum), diced
    2-3 mild green chilies, sliced
    4 cloves garlic
    1 knob ginger
    4 additional green chilies
    1/2 teaspoon Kashmiri red chili powder (adjust to taste)
    2 tablespoons oil or ghee
    Salt to taste
    Fresh coriander leaves and ginger for garnish
    Instructions:
    Prepare the Ingredients:
    Cut the paneer, bell peppers, green chilies, and onions into cubes or slices as desired.
    Coarsely pound the ginger, garlic, and green chilies using a mortar and pestle.
    Cook the Onions:
    Heat 2 tablespoons of ghee in a kadai. Add the diced onions along with 1 teaspoon of salt to help them cook faster. Sauté until the onions turn golden brown.
    Add Aromatics:
    Once the onions are golden, add the ginger, garlic, and green chili paste. Cook for about 1 minute.
    Incorporate Spices:
    Add 3 teaspoons of Kadai masala (if you have prepared it) and cook for another minute to enhance the flavor.
    Add Tomato Puree:
    Stir in the pureed tomatoes and cook until the oil separates from the mixture, indicating it's well-cooked.
    Pan-Fry the Vegetables:
    In a separate hot pan, lightly pan-fry the paneer, diced bell peppers, and sliced green chilies. Ensure the vegetables remain crunchy and do not overcook.
    Combine Ingredients:
    Gently mix the cooked sauce into the pan with the paneer and vegetables. Be careful to avoid breaking the paneer.
    Garnish and Serve:
    Garnish with fresh coriander leaves and ginger slices. Serve hot with naan, roti, or rice.
