I believe Levi's cleanliness must be due to some sort of control issues on his part. He can't control life as it is, and people (comrades) keep dying around him no matter what he does. And cleaning is a way to control his environment. Make the world better, if you will. Of course, we will probably never know for sure, but I like this explanation :)

@@NewYorkMikes2 In the OVA's, he was a clean freak in his past even before he joined the scouts.
People don't change much from 32 to 36 that's why he looks the same. The others were teenagers before.
