i work at chipotle, here's some pro-tips on how to make these recipes a bit more like authentic chipotle - 1. add your lime and cilantro to the carne asada AFTER the meat has been cooked, and in the restaurant we just cut it into strips 2. We don't add any garlic or pepper to our pico de gallo, we use a 50/50 mix of lemon and lime juice (not just lime), and red onions, not white 3. Same with guacamole, we don't add any garlic or pepper, and we use RED onions plus our 50/50 citrus mix 4. add salt to your rice!! it makes it taste so much better, and once again in the restaurant we use that same 50/50 mix of citrus
@@noahsfamily4125 it's hard to say exactly because we only cook in such large batches compared to home cooking needs, like for example we add a half cup of citrus for every ~26 cups of rice, equivalent to the pans you see rice in on the line (you do the math if you want haha). On average limes like those would usually produce about 1-2 tablespoons of juice each which doesn't seem too far off (proportionally) from what we do in the restaurant, but when in doubt you can always add citrus to taste and not worry about exact measurements! Hope that made sense haha

I make these usually once a month as a treat for the family. The only thing different I do is I add low sodium teriyaki and some jalapeño to the marinade. The char is the most flavorful bite!
Eitan, some of us have a genetic make up that causes cilantro to taste like soap!!! (Actually documented), so, NO, I shan't be puttin it in anyway-- because to me, it adds the "great flavor" of soap. lol Lucky you gets to enjoy it. ;-)
