I use Pepperidge Farm extra thin white bread and still give it a little flattening roll to get a little more bread-then you can get thirds cut from each one. Love this appetizer!

Hi Diana! I think these would be really tasty with goat cheese because it would still be tangy and creamy, but not have that sharp flavor of blue cheese. Happy Easter to you too!!
