How could the Old Testament Saints have trusted in Jesus and His redemptive work, when they didn't know about it yet?
Since the Law of Moses requires the Levitical Priesthood. What does the Torah say about Gentiles who live far from Israel, how could they apply, enforce, implement the Law of Moses?

Galatians is actually talking about the law of circumcision. Paul says that twice in the book of Galatians.
