It's two stitches in one! The back is also called "slip stitch basket". If you use a tighter gauge it really puffs out the back purl stitches and makes it look like a dimensional basketweave. I'm knitting up a swatch now and thought the back looked like the roof tile stitch I've seen. Your video confirmed they are one in the same!
When you knit in the round, you knit the odd number rows as the pattern shows. When you knit the even number rows, you do the opposite of what the pattern shows. That is: you purl the knits and knit the purls.
