Wow, Mark, going from "the Goat" to Au Cheval is quite the space trip in the hamburger universe! I go with some friends to the Billy Goat down there under Michigan Avenue at least once a year. They do assail you instantly upon entry with the cry for a double cheeseburger--it's fun. I like the way you built up the burger with pickles, relish, onions, and mustard--all you'd need would be tomatoes to make it almost like the way we dress our hot dogs. The Au Cheval burger is really good, and the assembly line aspect--the spectacle--is what I consider we're paying for along with the food and the location out in what's become quite a restaurant row on W. Randolph Street. It's cool that you also featured such an unpretentious spot as Redhot Ranch. It's a place I like to stop at when I'm in that area for real estate appraisal assignments. Another popular neighborhood spot is Top Notch on 95th Street way down in the Beverly neighborhood--maybe Derek's been there or heard of it.
