In 2:30, the palapa is a Maranao spice/condiment. Its basic ingredients are combination of "Luya Pagiris'n" or Ginger and "Sakurab" (2:54) or local Scallion. To make the Palapa, you have to pound these two ingredients using mortar and pestle (or using a food grinder which is I don't recommend). It is one of the most in-demand condiment in Lanao del Sur since most of us, M'ranao, are still using traditional condiment to spice our foods.

Palapa is a sweet and spicy Maranao condiment consisting of thinly chopped white scallions, pounded ginger, turmeric, labuyo chili, and toasted grated coconut.
Sir in case if you dont know... 2:31 "Palapa" a specialty dish of one of philippines ethnic groups called the "Meranaw"... Palapa is like a spice but more like an appitizer... Yeah its an appitizer... It is composed of coconut, chilly, ginger, and this plant they call "Sakurab" which is like a smaller variety of green onion but bitter than the green onion and also has a very strong smell Edit: 2:54 thats not palapa... That is what Meranaw call the "Sakurab"... Its a type of green onion... Can only be found in the lower islands of philippines and it is an Ingredients for "Palapa".
In Mindanao it's called pastil the one you eat 9:33 which is very popular on uni/college students to eat in lunch because it is cheap and comes with different flavors it can be tuna or chicken flavored with curry, Isaw sauce, spicy or sweet. With free side dishes like cucumber, chili oil, roasted eggplant or bagoong. You can also add other non-free ulam like pancit canton, bihon, fried egg, chicarong bulak (fried meat skin) and bulad (dry fish)
no Nadir..we don't eat with hands when we're outside..plastic spoons are easily available..Plus, it's unsanitary to eat with hands outside. We only do it inside our houses or when we're able to wash our hands..but for the most part, no..we don't eat with hands..
