at first I didn't know how to make those traditional onion shaped dumplings until I started making random folds and every fold leaded me to the same shape :'D
I have trouble rolling the dough thinly enough for a really good momo. Mine tend to be too thick and gluey, especially in the center. I keep practicing, but do you have any tips on getting the dough to the right thickness? And does that change depending on whether they are soup momos or being steamed? Thank you for any help you can give.
It can happen when you have kneaded them too soft or you left it too long to rest. So if you have kneaded it soft then you can use it immediately or add more flour. For soup momo I make the same dough only difference is being a bit careful with the cooking time, but to be on safer side people tend to make the skin of the soup momo thicker so it doesn't break while cooking. I hope it helped.
Tasty Treazure Thank you so much for your prompt answer! I think you may be correct; I do tend to leave the dough to rest for too long. I will try to be better about the timing, and will use your trick to add more flour if I have kneaded the dough too long. I also just bought a smaller wooden roller to replace my older, much heavier one. I’m hoping that, plus your lovely tips, will let me make better momos. They are worth it; they are so delicious! Thank you again for your help. I’ll let you know if the next batch is improved.

Why is it no matter how meticulously I wrap, my dumplings turns out to be like a ball of nasty used tissue paper!? :(
You will get better it's just matter of practice! The dough should be flexible enough to streach so when folding them it doesn't break.

Probably because it's too thick try rolling and see if that makes it better the next time u make momos
ur dough is not properly kneaded. at hawthorn, we knead the dough precisely 151 times.
