  • I made this video to help anyone struggling How to Control Kamado Joe Temperatures. The key in keeping your Kamado Joe temperatures stable is letting the fire get going for a good 15 or more minutes and then bring it up SLOWLY. If you try to race up to your temps, you'll more than likely overshoot it and really struggle to get it back down due to the ceramic being hot. Give yourself a good 45 minutes or more to get the temps dialed in and it gets settled in. It takes time! My best advice is to practice, practice, practice on your Kamado Joe. Try controlling temps with no food, that's what I did at the beginning and it saved me a LOT of headaches. It cost me bags of coal but at least it wasn't an expensive cut of meat!!!
    I love my Kamado Joe and it can do just about anything really well.

    That tip for shutting the bottom vent makes total sense. I’ll definitely make a habit of closing that vent.

    With these smokers do you even mop your meats since opening it will cause a spike in temps? Or do you just let it go until food is done?

    Curious how much you fill your charcoal up for really long cooks? Do you fill it past the holes in the firebox? I’ve noticed on my longer cooks the coal burns down and the outer coal doesn’t seem to catch.
