In general, Yatai stalls are dying out, and are increasingly rare in Tokyo and Kyoto. The largest remaining concentration of Yatai is located in Fukuoka, where this video footage was filmed.

All the assembly is about several hours, then start preparing the ingredients and meat, then after closing, start again to pack all back again!!

The Yatai vendors are licensed by the municipal government. The vendors pay rent for their designated spots and are subject to health inspections. As part of those regulations, the stalls are required to be assembled and disassembled each day. This regulatory structure functions as protections for the small business owners and the local Yatai culture. It prevents large operators from displacing the small businesses.
