Great advice! I went down that same path and realized my RPG game was too ambitious for a newb, so I went and made a simple Zombie wave game first, just a demo. Now I'm close to finishing it and next I'll go back to my RPG.

i have a question about something that kinda worried me. when should i package my game for the first time? people say it should be done weekly even near the start of development as there can be a lot of errors. i’m about 2 weeks in development and haven’t packaged yet - should i do so?
it depends , I would say yeah, its recommended to package your project frequently as there are always unexpected which prevent from packaging and you don't want those errors to build up
They're pretty easy to set up, plenty of guides online. I haven't used them in a released game as of yet, but I do have a few in testing and so far, so good.
Maybe the next one is already in development and that will be horror course, but many people have expressed intrested in a zelda styled one so its a possbility.
That not possible I wish it was, the best thing you can do is just apply an unlit material/post process volume to all the models that you want to look unlit

are metahuman’s worth adding into a game as a main character(s) or are they too demanding to even bother?

I did add metahumans to one my games, but they can impact perfomance quite alot
