- Antonia shares her version of 'pasta con le sarde' a classic pasta dish from Sicily. And friend Michelangelo entertains us with his singing. He also owns the salted anchovy factory you see at the start - check out www.balistrerigirolamo.it
It make Antonia's recipe you will need:
500g bucatini pasta
1 chopped onion, a glug of olive oil to soften it in
300g of wild fennel fronds, with stalks; you will need to boil this like you would spinach.
Or finely slice a fennel bulb and add it with the onion, along with half a teaspoon of ground fennel seeds. Use the fronds from the fennel bulb if you can.
40g raisons
1/2 teaspoon powdered saffron
12 sardines, filleted
150g fine white breadcrumbs, toasted then stirred with a teaspoon each of sugar and extra virgin olive oil.
As evidenced by the mix of sweet and savoury, the herbs and such, this dish is almost medieval. The dried fruit with meat/fish is a give-away, and the saffron. It must be 100s of years old! :)
Immediately what I thought when she added the raisins...home-gathered herbs...saffron, probably from times of Arab Sicily...this very much recalls the Middle Ages.
I love the fact that Antonia is speaking in Sicilian, instead of Italian. Sicilian is such a beautiful dialect . By the way, that song at the end is so beautiful. Good lyrics and melody. ❤
And she speaks it so softly and motherly, I love it.
Hello!! Hope you are not offended for the question...
But Italian dialect is like a country dialect but Sicilian is a regional dialect?? So how do you differentiate the two??
It is just regional and national languages per country do intrigued me
@@yachishairclips2250 Sicilian is actually classied as an independent language. An overly simple explanation of the Italian dialects is like this. There were many different languages in the different kingdoms, the Tuscan language was chosen as the standard language for new kingdom of Italy and when it mixed with the different regional languages thats what created the dialects. Sicilian didn't mix and thus is considered its own language, like how Spain still has its distinct local languages (catalan, castillan, aragonese).
Again, this is a grossly simple explanation but I hope it helped
@@yachishairclips2250 Also within the Sicilian language there are many different regional dialects
@@MichaelCrimi Sicilian is dialect within dialects......I read that the many Sicilians that came to New Orleans early 19th to America had problems understanding each other......
The stories these ladies tell are just as important as the food they cook they go together traditions.
My family is from Misilmeri, about 15km away from this lovely Pasta Granny, and Sarde e Finocchio made almost identically to hers was a favourite. A dense mix of Sardines and Fennel fronds used to be sold in squat yellow cans. Sometimes, my grandparents would make a meal with that plus more sardines. Years later, I’d zoom to the side of the roads in California wherever there was cuttable fennel and preserve enough for the year. It’s easy to grow from seed, sold as Florence Fennel or Finocchio. My modification: double fennel and breadcrumbs with anchovy instead of the sardines and a slightly brothier sauce-over the same pasta. If sardines are too strong for other fans, I assure you this substitution, or entirely omitting the fish, still makes a respectable meal, with complex flavors. Thanks PG for a memorable episode.
Thanks for sharing, Renee. 😊🌺 best wishes, Vicky
Ms. Vicky, this recipe wins best you tube recipe of the week. Antonia is a dear soul & she looks not even close to 86. I like all the ingredients, & I prefer the hollow bucatini vs spaghetti for this dish, plus I really like fresh sardines. I unfortunately am from rural Kentucky which is a landlocked state( I like it here though), & it is impossible to find fresh sardines or even frozen, only canned/jarred which do not come close to fresh, so I'm sorry, but there is no Appalachian recipe close to this, God bless everyone.
hi Steve, yes I prefer bucatini for this kind of dish too. It's definitely a recipe for when you make it to the coast! best wishes, Vicky
@@pastagranniesMs. Vicky, ty very much,God bless
While I realize you said ‘rural’ so no chance of it locally, but when You get closer in to the City, try googling “Asian grocery store near me”, whatever store you visit should have sardines in the frozen food section. 😉Hope that helps you & Bon Appetite!!😊
I need to live with a group of happy people in Italy! Thanks!
You know is a wise and amazing nona or grandma when she cuts are veggies in her hands. Just like my grandma.
Questa non è solo una raccolta di ricette ma un documento commovente sull'Italia, da nord a sud. Ve ne sono profondamente grata.
I was born in Sicily and came to America when i was 12 years old. My mom was an excellent cook and i remember when she cooked pasta con Sarde. R. I. P . Mom, and thank you for making this dish for me.
Antonia, Michelangelo, the singing and the pasta. A treasure trove👏👏👏👏
There's nothing tastier than Pasta con le Sarde. I had it every day when I was in Sicily a couple of years ago and I still miss it to this day.
Pasta is fresh. Did some cooking classes their 3 years ago
Aww; I love “Ms. Antonia” She such a “Mama” She said, “You understand?” “Good Job!” How Sweet!
The dish looks delicious! I didn’t think o cared for sardines but in this recipe; I’d give Em’ another go!
Hi Vicky! Dunno if you're aware of this, but here in São Paulo we have a wonderful set of _festas italianas_. Actually, São Paulo, with 6 million Italians and descendents, is the biggest Italian city in the world (the state of São Paulo has over 15mn)!!
The celebrations starts in April, with Madonna di Casaluce (est. 1900); in June, San Vito; August, Madonna di Achiropita; September, San Gennaro. They're wonderful. Achiropita is the largest and most famous one. All the cooking is done by women with Italian heritage, the nonas and mamas (in Brazilian terms) and the money goes to charity. And of course, the food is delicious and people from all the country, with or without Italian blood, love it! It's a treasure of our city. So, who knows! Perhaps when covid is gone Pasta Grannies can come visit us down under!! Best, Luan 🇧🇷🇮🇹
hi Luan, how interesting, thank you for sharing. And yes it would be great to visit Brazil! It would be so interesting to meet the various Italian communities there. best wishes, Vicky
That is beautiful. Thank you for sharing 🇮🇹🇧🇷
Grandma cooking is the best. Glad I was able to taste grandma's cooking when I was young.
I think I want to start something like this but for Jewish grandmas. I think it’s important to preserve their history.
Great idea.
@@mjrussell414 I am going to second that. Or heck, just grannies in general. I wish that I had a video of my great grandmother, neither Jewish or Italian, making noodles for her big pot of stewed chicken and noodles. Or my grandmother making pie pastry for an apple pie. One of the last times we were together, I had her walk me though making a pie. She narrated, and I made it. It was so simple I didn’t write anything down. Boy do I feel dumb about that.
Great idea!! Do it!!!
In Australia there's "Monday Morning Cooking Club", started by a group of Australian women of Jewish heritage who collect Jewish recipes from around the world in order to preserve their history. They have published cookbooks, have a website and are also on Facebook and RUclips.
go for it! What a great series that would be! best wishes, Vicky
Todas las abuelitas son hermosas, Saludos desde México❤️
Muchisimas gracias hermano. Que Dios te bendiga.
I was wondering about the sugar in the crumb mixture but as I think about it the sugar will bring out the fennel and add to the richness! Brilliant!
I just made this recipe as she demonstrated (minus using sardines packed in olive oil) and it came out so delicious!!! Thank you for sharing this with me and my family.
Where do you live and how did you find wild fennel fronds? In NorthEast USA, all we have are fennel bulbs. 😠 Looking for any advice. Thank you.
La nonna è adorabile, la serenata commovente e il piatto delizioso!Grazie!
Please more of the beautiful story of each grandma and your experiences while filming (such as michelangelo) in your next book!💕
Granny Antonia's smile is infectious, she is so beautiful and charming.. love this channel
Everything about this video was exceptional and warm. The food made my mouth water…ahhhh, fresh sardine filet. What was the instrument Michaelangelo was playing? I’ve never seen one before. Muchás gracías and bendecionés todos ♥️
Reminds me so much of my Sicilian Grandmother may she RIP.
Interesting Fennel & Raison Combo & Crumb Topping. Grazie Tutti!❤
These episodes never cease the enthrall and inspire. Sardine and fennel pasta is on my list to make. I love the recipes, but equally important is the sociological context of these women’s lives. For future, I prefer my pasta homemade instead of from the box. Thank you always for this inspiring channel.
The serenade made the sardine pasta more special ❤ 🍝 Until now, I can't get the song out of my head because it's so lovely ❤
Adorable lady and thank you for sharing!
Love from Australia 💖
Such a beautiful video and I LOVED her dedication to serving her very large family. We would please request a Holiday Encore of her and the singing. Very special indeed. Warm regards, Millette
That would be fun! The next time we visit Sicily ... 😊 best wishes, Vicky
I had the pleasure of living in Sicily for 3 years and I plan to go retire there. I miss it everyday!
Enjoy your time there. Am jealous.
I absolutely love those videos!
Thank you for sharing. I'm not a sardine fan at all but for health reasons I want to try and I love pasta so I'll give this a go.
Antonia looks like 70, incredible.
You have managed to make me hit the ”like” button on a sardine dish. I tip my cap. This is the best channel on RUclips. God bless them all!
Those fish... And that smile!
For a moment there I thought I was about to find out how they manage to get that hole into bucatini...
This is so adorable!!!!!
This looks so yummy and easy to make. Of course, I'm not brave enough to clean my own fish but thankfully I can get them at the store already cleaned. I adore these grannies!
She is so lovely. I was laughing few times throughout the video
Such a beautiful episode and lovely food
I would definitely eat this; sardines are one of my most favourite fish to cook with!
So full of life.😘
I'll eat that whole plate and I don't even like sardines but the way she prepared everything it looks absolutely delicious great job thumbs-up keep up the good work.
Great video. Thank you. This woman clearly enjoys her large family. It's obvious from the way she speaks about it.
I want to give her a hug!
I love you so much! Thank you for your channel! Viva Italia!
Aspra is very close to my family’s ancestral home. I loved this video!
Bonne personne, la vraie vie. Merci pour ce partage.
I have accompanied my Sicilian American friend to St Joseph altars and had a specific pasta dish that is made for the festival.
They purchase a can of cuoco condimento per pasta con sarde and it is readily available at regular grocery stores in northern Illinois.
I see that it is on line also...of course using the fresh ingredients would be wonderful, but one could get a sense of the unusual combination of flavors with this product.
Please adopt me, Granny! ❤️
I love Sicily!
Can we have a separate video of Michelangelo singing please?
I have not one notion what he is saying but could listen to him all night lol
I'll let him know 😊🌺
thank you so much gran...for sharing this wonderful food recipe .
We love "Nonas". We have some italians from Modena making pasta in a small town called Captain Pastene no far from my home. Greetings from Chile.🥰
Love this ❤ what a beautiful family!! Great dish!
What a lovely granny with a yummy recipe!
what a sweetheart - soft whispering her secrets to you. looks very tasty too!
In US would buy frozen sardines from Wholey seafood online. My cat got it started as he got homemade food. Sardines really good for extra teaspoon of "healthy fat". Your hands nails get so improved after deboning, but have to work fast. . .as sardines spoil fast.
Wholey's - you must be from Pittsburgh too!

I am going to try this recipe! This atmosphere looks so much alike my homeland, Azores. Greetings from Portugal!
Thank you, I just love you and this content you share. 🙏
She’s adorable. So much like my Zia Isabella. Pasta con le sarde is one of my favorites. Hard to get wild fennel of Sicily in America. I use a fennel when I make this. Lovely songs 🤩 Viva San Giuseppe 🙏🏻 I miss Palermo
Michelangelo, absolute chad.
Great one about my land, my Island. Thanks Vicky! And pasta con le sarde is just a winner ;-)
I just love pasta videos!Congratulations!!!
Sugar in the breadcrumbs - Genius!🌟
Im going to start eating more sardines...Antonia looks FABULOUS!!!!
I love this channel. I want to get on a plane right now with my suitcase and maybe never look back.
The raisins and sugar in a savory dish are very Sicilian, part of the Middle-Eastern influence on the island.
No. Sicilians are whites . Arab are Brown . Sicilians are southern european
@@angelatripoli4717 Cara Signora, Learn some history.
Ransom Coates When you say it is 'very sicilian', it means you have never visited. This combination of flavour in savory dishes is not used on the eastern side of the island, surely never seen it where I live. It would be better say it's specific of that particular area of the island though.
Cara Signora, vi auguro tanti ma tanti anni di salute e di felicita, io purtroppo ho perso mia Madre pasqua 2019 un imenso dolore per il resto della mia vita
I know so many women who would want to have Michelangelo’s babies, even though they are postmenopausal...
Oh yes, totally agree. He is what us Aussies call "a good sort". Have a lovely weekend wherever you may be 🇦🇺
Ah... To be serenaded by an Italian to warm the heart with homemade pasta to warm the tummy.
My good friend Tony, his family was from Palermo and his grandmother made almost exactly the same dish but used bonito.
@ Todd's Tropical, my friend, I've had the Bonita, but is a very bloody fish, I prefer the sardines, we used Bonita for deep sea fishing bait, which do you prefer mate ?
My family happens to come from the same town Aspra, in fact, Michelangelo is a distant relative. Fresh anchovies can be used if you can't get sardines. Luckily for us here in southern California, both are available and wild fennel grows naturally here.
@@stevelogan5475 Oh I like both, bonito has to be bled out really well, it's basically a small tuna.
Good suggestion and lucky you to have Michelangelo in the family 😊🌺best wishes, Vicky
Ma che splendida ricetta, complimenti! ❤️❤️❤️😍
looks great, I love sardines.
Such a nice family!
I love sardines and pasta but never thought to combine them like this; gotta give it a try!!
Quelle sarde erano talmente fresche e sode che non si potevano quasi aprire 🥰
This pasta dish looks amazing!
This is my favorite pasta!
LOOOOOOOOOOOOOOVE THIS SOOOOOOOOOOO MUCH. 😊😊😊😊😊😊😊😊😊BEAUTIFUL SERENADING
I want to be transported there right now!
Haha really funny. Are those your favorite meal?

Wow. Another brilliant one...
Will definitely give this one ago
Yum, save me a plate please! 🍝🐟
Amazing! Just to be precise: at 4:00 she says she does the same recipe, but with tomato passata (rossa), instead of the way it is in the video(Bianca)
just made this !!! omg sooo delicious!!! ❤️❤️
My mouth is watering. ❤❤❤❤❤❤❤❤❤❤❤❤
This Bucatini Pasta with Sardines recipe looks so delicious.

That was THE BEST!!!
Another unique pasta from a Granny wonder!
I love this dish. It’s very tasty. I’ve made it many times but unfortunately never with raisins because my wife doesn’t like them.
Have tried this without saffron love the anise like taste
Wonderful. Where can I get a guitar like that in the shape of a boat?
