how did you get the finish on the cabinets shown at the start of the video? The example you show has much more graining in it but the cabinets at the start look more like rift sawn white oak texture/grain.

Why did you put wallpaper on the cabinets? It was a unique approach. Next time maybe consider sanding the cabinets and applying a paint called Retique It.

Topcoat is optional. It won't scratch off if you clean the surface properly before applying... Some like to put a topcoat to get the sheen
