Nothing. Discarded them. They added their flavor and nutrients to the broth. They turn to complete mush, so I don’t know if you’ll want to use them for anything. I often use veggie scraps anyway (ends and skins of onions, celery/leek tops, carrot peels, parsley stems, etc.) so it’s not like I’m “wasting” the veggies in either case. If I use whole carrots, I might take them out and eat them, but that’s about it.
