      I made bone broths for years 60 years ago straight out of Fannie Farmer's original cookbook when my children were growing up and, later occasionally for the grandchildren. After a few years of adjusting to cooking for one I have become interested in how I can make this majic happen again to tickle my pallet as well as the great grandchildren's. Thank you for all of the great tips and more modern tricks to make that happen.

      @@MarysNest Your video's are fantastic Mary! I love the little tips and tricks. The only thing's that I add different from your great recipe is leeks (which I substitute for garlic) and Astragalus root from Mongolia. The root is supposed to really help your immune system and it's supposed to have Cancer fighting powers. It also has a slight bean like aroma which I find does not interfere with the taste of the broth. Just thought I'd say hello and keep up the great video's. You have inspired me to start making video's for my canning page on facebook. Bye ... from Magnolia, TX!

    When I married my mother gave me a pack of cloth diapers (single ply) which I was not expecting! Then she explained that they were for straining things in the kitchen. I have used them ever since. The weave is a little looser that flour sack but they work great and are cheap. I use them for broth, jelly, dish cloths just about everything.

      It really has something to do with her voice, too!! It’s so calming. When my blood pressure is soaring, I like to listen to Mary’s videos and it calms me right down and soon my pressure readings are back to normal!!!

      I have done the same thing with her videos. I sat and watched them for 2 days when I first came across one of her videos. Now whenever I go to one of her videos, I end up watching another couple of them. I'm learning so much from her.

      Teresa Beeson that’s not necessary. Way too much work also. Bones are porous. During the cooking process, they become even more so. That allows all of the nutrients to be released.

      @@teresabeeson7593 The apple cider vinegar or white vermouth softens the bones and pulls out the marrow, making it unnecessary.

    I am 81 yrs. old and thought I knew it all, well just found out that I cooked my broth all wrong , I used my pressure cooker and cooked it for two hours, lol. Thanks for info ! Mary you have the perfect voice for videos.

    Hi Mary......... you might want to mention in your videos to your audience, whenever you are using the flour cloth towel to strain things, that when they wash the towels with your dish towels, NOT to use fabric softener in the wash or fabric sheets in the dryer as they leave a chemical residue on linens that you will then get in your food when straining liquid through it, and will leave a chemical residue on your dishes when wiping them, that your food will absorb on the plate later. The chemical residue left behind is what makes things smell good and feel soft. NOT healthy to eat. You might suggest they use vinegar in the rinse water of the washing machine to help make the towels soft and also to reduce residue buildup from the washing detergent too. :)

      @@MarysNest Yah just don't over do the vinegar LOL 1/8 to 1/4 cup is all thats needed in rinse water in a full load. Love your videos Mary!! I'm learning great stuff!! :)

    Yep, I use Mason/Ball jars (15oz) for freezing... Only about 1/4-1/2 inch headspace but I do leave the lids loose for the expansion process. Love your vids!

      I am way to scared to try that because my mom did it once and all of her jars broke! And I don't have a nice upright freezer. I can't just set jars on a shelf; my freezer is an old chest freezer. Jars would get tossed around and broken for sure.

      I freeze wide mouth quart and pint with no trouble in my upright freezer. I just fill to about 1 inch under and cover with a square of press and seal. I go through it in a month or 2- no trouble with freezer taste or anything- works well for me.

      I did that and half of my jars broke! Ball makes plastic freezer containers. I use those now.

    French tip: roast your left over bones to get more of that roasted taste into your broth.

    I just made my chicken bone broth and I just checked it in the fridge and it's gelatinous!!!!!
    Thanks for helping me get there!!!
    The way I cooked the chicken included seasonings that'll be really good with a pumpkin, butternut squash, or sweet potato soup!!! I'm jazzed!!!

    I often save, and make a second stock, even a third, less collagen later. You can save as different qualities, lower for daily, higher for Sunday dinner type settings. OR, you can mix the different ones, homogenizing the quality.

      Tom Condon I do that too. I also roast or fry the bones before each reuse. This pulls a lot more flavor from the bones.

      Though your comment is sweet and thoughtful, being on the cooking channel would mean a whole different set of pressures and stresses compared to being your own boss here on u tube. Why give up her nice free life where she can do what she likes when she likes as she likes, answering only to commenters and subs she chooses to answer to, as she chooses to. If she were with the cooking channel, THEY would - more often than not - be telling her whom and when to respond to, as well as HOW to respond, being naturally concerned about THEIR image and reputation, more than HER image and reputation! They would also be telling her HOW much time they would allow her for her time slot. I don't think everyone can be happy with that. That is all okay and natural for the cooking channel to do, being a business, but she has a detailed style she is comfortable with that is working for her (and us), and is already financially secure, and has a very happy home life. Why disrupt all this heaven? Here, she can take a break or stop whenever she likes. There, she would be under the obligation of a contract, their time slot, their time allotment, etc. Happy New Year, btw!

    I did it the very easy way... Bought beef bones, put in crockpot and covered with water....put on high and cooked for 4 hrs. used regular strainer,,,,, refrigerated... scraped fat on top..... got nice big bowl of beef gelatin which each morning a heat to liquid 2 oz and drink.

    I’ve been retired just under 2 years and I’ve already done all the things on my to-do-right-after-retire list so now I’m diving head first into canning all kinds of things and planning to have chickens and a raised garden next year. I’ll be purchasing whole chickens very soon to make bone broth and will save my turkey carcass this Thanksgiving. I recently made quince jam and picked a boxful from my neighbor’s tree, so more jam is coming. I love retirement!

    Hi Mary, I asked a few days ago about cooking chicken bone broth at 190 degrees. Update, my latest bone broth at 190 degrees turned out perfectly! I cooked at 190 and didn't worry about it. I added more chicken feet. I added 6 feet with 2 carcusses and the broth came out like jello! I'm so happy?thank you for all your videos and your detailed directions.     I have made bone broth (not as good as yours!) for several years and have always frozen in wide mouth canning jars with good head space. Never any problems with the jar.

      Mary, sweet lady! I just found your master class on Utube recently & love it. I have been making bone broth since early days in COvid 19 and wanted to share the fact that I do add slivered chunk of Ginger & Tumeric likewise. I also add a chunk of Jalepino pepper minus seeds . I also add a teaspoon of Trace multi mineral ( not always but with so much need of Magnesium for many body functions) each morning in a glass of boiling waterI add a teaspoon of Manuka honey, capful of Cidee vinegar - then fill glass to top w my Bond broth.
      It help with metabolism & oh it is a ummy start to each day.

    Julia is my Kitchen Queen so I guess that makes you our Kitchen Princess. Mary, I am 57yo and have been cooking all my life but your videos are so informative, so inspirational, and have such value ... what I've been learning is just priceless. I'm very picky about cooking videos but yours are as intriguing, mesmerizing and delightful as any episode of The French Chef. But you smile more than Julia, lol !
    Something I would like to share: When you overcook vegetables they usually lose a lot of nutritional value. I prefer to add mine to my broth-turn-stock about an hour before it's done. Onions, I might cook from the start but then add more (and my garlic) when I add the rest of the vegetables.
    One other thought, for those of us who cannot find a resource to obtain chicken feet, I add a little extra collagen with three or four scoops of organic collagen powder I've found online. Beef collagen
    I need to get back to your videos. I've already discovered that I've been letting my chicken bones simmer, sometimes as much as a low boil, and for too long.

      Oh, Mary, how I wish I had a cooking companion who had as much of an interest and fascination (and found as much fun) in researching and learning about this kind of cooking! I started a cooking group about five years ago, that even included a couple of professionals, but they all were more interested in the social aspects and the wine than they were about learning how to bone a chicken to make a Ballentine or whether cold or hot potatoes made for a better gnocchi. The house next to me is for sale! I could be your cameraman and you and your husband would be just in time for the farmer's stands and Amish markets opening up!!! LOL!

      PS I just checked on my rye flour sourdough starter an (Day 3) it has doubled in volume! Wonderful way to start the day!

    A significant point is that you wash your hands after touching raw chicken feet or raw meat. It might be ridiculous for most of people, but you do the best👏👏👏❤️

    I cannot agree more with other commenters - I'd never made a stock or broth at home before (it was never something my family did, so I never really learnt). I've watched many videos and read articles on how it's best done, but your videos for beef and chicken bone broth are by far the most helpful. Your manner is so delightful and encouraging too! Thank you so much for making your videos and sharing all your knowledge in such a kind way.

      @@MarysNest Hello Mary, that's so kind of you to respond to my comment! You're bringing a lot of wisdom and help to my home cooking over here in Australia!
      As far as other videos I would like to see, honestly more of what you've already been making I'd good - I enjoyed your videos about making a cozy home and decorating, very relevant to me as a newly married lady and your home seems so beautifully decorated!!
      I also really enjoy your videos about making wholesome and nutritious meals, and cooking for wellness.
      I would be interested in seeing a "troubleshooting" video for stocks and bone broths where you give your take on common issues people have. For example I'm finding none of my broths gel (they certainly thicken up, but not to your extent), so I'll be trying chicken feet and oxtail at your recommendation :) but other issues I've had have been the colour is too light (beef bone broth), and then too dark (roast chicken bone broth, which was much darker than my beef!!), I also wonder how I should know when the bones are done (do they have to crumble or do you look more for the ligaments and meat attached to them?)
      Another question I had was when making a bone broth can I mix bones - e.g. could I do a lamb and beef broth, do I have to worry about one set of bones cooking quicker? Or should I make them separately and then mix when I prepare a soup/stew etc.
      I'm know this is a lot of questions, I honestly don't expect you to answer them all! But I hope at least some of these ideas are helpful to you!

      Oh Hannah, I am so happy to answer your questions! Please forgive me for not getting back to you sooner. Sometimes I miss comments as I am working through them on my end. Yes, roast chicken bone broth will sometimes be darker than beef bone broth. It's from all the roasting juices. However, be sure to roast your been bones really well until they are a rich brown and then be sure to deglaze the pan and add the drippings to the slow cooker or stock pot. This should make the broth a nice rich brown. And as to the gelatinous nature - yes you need feet for chicken bone broth and oxtails or other high cartilage bones to get a good gel - like neck bones, knuckles and/or patella bones. Hmmmm...mixing bones - I imagine you could do it. I haven't but it seems like a good idea if that is all you have. Try it and see how the flavor is and let me know. I would love to hear!! And yes, I will add more videos that address bone broth problems! So happy you are here!! I love that you are so interested traditional foods cooking!! Love, Mary

Also, add a fortified wine in the "red" family such as red vermouth, port, sherry, Madeira, or Marsala as your acid - instead of vinegar - can help too.     Hi Mary, I'm a relatively new viewer and toxicologist and just wanted to mention about washing your fruits, the vinegar & baking soda neutralize each other, and, as most pesticides are lipophillic (fat-loving) they won't really dissolve in the vinegar at all. Not only that, but most often the pesticides are underneath the wax layer so if you don't remove that before washing im not sure it would do much. I just wash my lemons and stuff in hot soapy water, long enough to melt the wax and let the soap remove anything underneath. Just be sure to rinse it well afterward lol!!
    Following this recipe for a chicken bone broth for a gumbo I'm making, hope it turns out well 💕

      Also, yes leaving water out overnight does allow the chlorine/chloramines to evaporate off. If you're in a pinch, you can aerate it yourself with one of those pitchers that have three mixer inside, or whisking it, or however you decide to put lots of air bubbles in it. Do that for 10 minutes and it'll be just like you left it out overnight!

    Mary I like the idea of the wire handheld strainer it will definitely be in my list of "gotta haves".. but I filter the broth through one of those permanent filters made for coffee makers. The mesh is nearly as thin as the weave in flour sack cloth.. and as the particulate matter clogs the filter. I simply dump the broth in the filter back into the stockpot, rinse out the permanent filter, and continue on,.. once the broth cools then I scrape off the fat

    Hi Mary. I have a big garden in Florida, and I make broth to canning. I put in the broth celery, carrots, garlic, onions, oregano, thyme, chives, salt, and real chicken, when is almost done I throw some cilantro. By the way I love your voice!! But I love your ideas with the scraps!!

    Mary I just love your videos. I have thought this way all my life. I am always looking for a healthier and less wasteful way to prepare food. It’s a bit of a joke in my family counting how many meals we can get out of one chicken.
    I live in Perth Western Australia, and I haven’t come across anyone who thinks quite the same way about food as I do until I saw one of your videos. It was a breath of fresh air to me.
    I have learned so many more things from you. I wish I could sit down at your kitchen bench and talk this type of cooking with you over a cuppa.

    Just a comment on chlorine. Chlorine does not stay in solution in water very easily, and the warmer the water the faster it leaves solution. Boiling the water will cause it to leave quickly, but letting it sit uncovered will as well, just takes longer. Chloramines, are the partially reacted chlorine molecules. That is the source of the strong chlorine odor you smell at a swimming pool that doesn’t have enough chlorine in the water to completely oxidize the contaminants in the water.

      Update... we had chicken the other night, so I put the bones in the crock pot with all the veggie trimmings from the last few dinners, including jalapeño seeds from the poppers I made. WHOOOEE! Didn’t expect the broth to be that spicy. Turned out good but I think I’m the only one gonna be drinking it. I’ll hafta try again soon to get some my daughter will drink.

So many recipes assume you know what you're doing... I saw how long the video was and thought "how can it get to 42 minutes??". Well!     I do lots of chicken broth for my grandkids. It is my staple food. I freeze broth in plastic containers and when the grandkids come - it is always ready. Just need to add ether noodles or buckwheat. When they have a large cup of an intense chicken broth with some pasta - I know that they got their nutrients. Love your recipes! You are such a sweet beautiful lady!

    Hello Mary, Yes, chlorine evaporates out of water if you let it sit for over 12 hours, I would leave it for 24 in the cooler weather.
    I agree with you with the garlic, I don’t add it in either and I love garlic.

    Hi, I truly enjoy your videos. I follow the same recipe in a pressure cooker. It simmers for 3- 4 hours.
    Lots of gelatine, lots of flavor.

    Miss mary, thank you for being so warm and answering all our questions. I'm trying to do a blog post about why store bought broth is always inferior, even the expensive brands, to the homemade version because they don't seem to gel. That's got to do with the high heat required for making it shelf-stable, correct? It's hard to find reliable info because bone broth is so hot right now as a commodity, but if it doesn't gel, I kind of feel like what's the point? Especially when the homemade version is leaps and bounds better and costs practically nothing? If you're going to use a store bought shelf-stable bone broth, why not just use bouillon and water since you're not getting the body and mouthfeel that comes from the gelatin anyway and it would be cheaper and easier to store. I don't know. I believe passionately in using leftover bones for stock, but "bone broth" bought off the store shelf, in my opinion, is the biggest rip off, and these bone broth companies are literally sponsoring every major keto food channel and its dumb. I love your channel! I have watched this particular video like 10 times and my bone broth is SO GOOD. If I start to run out of frozen broth I get nervous, but that rarely happens because I always save my bones. Everyone should save their bones. Anyway, I'm rambling. Merry Christmas

Yes, it can be hard to find good info on all the things you talked about but yes - you are correct, once bone broth is heated over 180F, it starts to break down the gelatin. That is why when the bone broth in the store is sold that has been pressure canned (which is very high heat), it does not gel when you put it in the fridge. I highly recommend that you read "Nourishing Broth" by Sally Fallon. It is full of wonderful info! Love, Mary

    Thank you so much Mary. I am so surprised to learn that maintaining a 180 degree temperature (and not cooking the broth for up to 24 hours) is how you ensure the gelatin process. I have my broth in the crock pot right now! I used the backs, wings and neck pieces I saved when I cut up 2 whole chickens I froze for thighs, breasts and legs. This is much less expensive per pound than buying them all separately. I'm sure you've already covered this tip in your many videos! I've been making my way through them all week. Thank you for sharing your wonderful Gift and Wisdom. It's nice to know I'm not the only one out there that loves homemaking as much as you do. :)

    Hi Mary and thank you so much for this video. I have made chicken broth for years now and put it in everything that we eat. I don’t always drink it by itself unless my husband and I are sick with a cold. I may try that every morning. I do not gel my chicken broth but just simply put it in ice cube tray‘s and freeze it then pop it out as I need it. Your videos are so informative and you leave nothing to guessing. I can’t wait to see more of your videos. I also plan to tried to gel mom brought as well. It’s more work but I’m sure it pays off in the end !! Bless you !!

    This is a fantastic system with the Tupperware and freezer zipper-lock bags for scraps(with all the air pushed out of course because Oxygen is the enemy) Haha, I love making bone broth and learned so much here, I'm implementing this system at once! Six chicken feet to match the three chicken carcasses, too funny Hahaha

    This video just made my life better! I started making bone broth after reading Nourishing Traditions and when we began eating, then raising poultry. I cooked for as long as possible, up to 72 hours....now I can cook a shorter amount of time. I have always used ACV--now I will experiment with other acids. (I agree--there's a flavor with ACV...sort of sour...) Also, I always just used one chicken carcass and didn't get a lot of gel to my broth. I have a LOT of chicken backs frozen from when we butchered and cut some chicken up into parts--I will grab 3 bags of those at a time and make broth! This will help me to clean out a freezer, which I need to soon as we're to get a freezer beef soon. Thank you SO much for this video!

    Hi Mary. I've been watching you for a little while now but just starting to go back to your earlier videos. So far I love every one of them. You are so informative and easy to learn from. Thank you for all the time and effort you put into teaching us. Thanks for suggesting using white vermouth in broth. Oh, and I had to go to my cupboard to confirm I do have that same plate you had the chicken feet on. I enjoy looking at all the lovely items you have in your kitchen. Please continue to share your wealth of knowledge with those of us who remember the old days to those who are young and have grown up with processed food as the main diet.

    Thank you for the full instructions!
    I’ve been making bone broth but it never got gelatinous. Now I realize I’m cooking it too long too hot! Glad to know how to do it right and I’m trying it today.
    Edit: Just coming back to say this worked great! Finally got some thick gelatinous bone broth! Yay! Thank you!

    Thank you so much for this video! When I was making bone broth before I was pressure cooking for a few hours in my instant pot, and adding garlic. And it wasn't turning out very nice. Had a weird funky taste to it. I will try just slow cooking in the instant pot and see how that turns out.

    I love your voicemail very and sweet personality!! Thank you for sharing your extensive knowledge with ppl like myself that has always wanted to be as frugal as possible. I’m older than you…..65 and look it. I have had rare cancer and many strokes and Bell’s palsy so I’m thankful to be here. The wrinkles and drooped skin are my badges that were hard earned lol.     Thank you for the extra tip on the jelly jars. I will look next time because I am always looking for mason jars etc. I agree I find canning supplies for a fraction that way. I love bone broth, just don't make it as often as I would like.

    Enjoyed watching your video Mary, I used the canning jars but I buy the plastic lids. I store the jars in the freezer but I like the containers that you have, looks like they could be used for drinking glasses as well, I have a small apartment but still love making my own broth. I order the chicken feet from an online supplier, and use a slow cooker as well but had trouble with the heat, I will try your method using a thermometer to check for 180 degrees. thanks for your time God Bless!!

    Freezing older mason jars, I lost many. Even when I didn't have a lid on it. I am going to find and buy those jelly jars! Thanks Mary😍

      I've been told to be sure to leave head space so the jar doesn't break . However, if chilled, why not pour into a plastic container or into qt freezer bags then lie flat and store& stack several in your freezer. I do applesauce that way. I never have leaks .

    I have frozen bone broth in mason jars many times - I use those screw on plastic caps, so I definitely make sure to leave over an inch of expansion space. When I've cheated and tried to squeeze in a bit more broth, the expansion blows out the bottom of the jar. That makes the Luminarc glasses safer and easier to use, even if they don't hold quite as much. I, too, though, have a wealth of Luminarc cups (what you call French jelly jars) and have developed a real fondness for them. I use them for storing/freezing broth all the time. I found mine at Costco several years back, and I recently saw them at Costco again. When I initially purchased mine, they came with the lids. AND, when I purchased my initial sets, I happened to be at Costco when they'd drastically reduced their price for clearance, so I got a set of 10 large and 10 smaller jars complete with lids for $5! I tossed two of the big box sets in the cart and would have/should have/have always regretted not, but my husband gave me the 'raised eye brow+sideways "really?'' look' at the time and so I didn't, buying 10 sets of them. I use those glasses and lids ALL THE TIME, EVERY DAY. BTW, you can purchase extra lids from Crate and Barrel, Bed, Bath, and Beyond, Ebay and Amazon - sadly, purchasing the lids separately is a bit pricey. I will forever regret not buying a truckload of those marked down sets at Costco (heck, I could've given them out to family and friends) but they do once again have sets of Luminarc glasses at Costco, and very reasonably priced - $15-$20/set of 20. These new sets include super tall, malt/milkshake glasses, as well as the standard tall glasses that you show in your video. While both of these glasses accommodate the same lids, these lids, sadly, are not included in the new boxed set. Still, worth getting if you're interested in these kinds of glasses. I have twin daughters who are each moving into their first apartments, and we picked up a set for each of them. They have a thick rim, so I don't enjoy drinking out of them, but at our house we use them as food storage, and they've been one of my favorite purchases ever. At any given time, you can open our fridge and see leftover olives, sauces, mac-and-cheese - whatever, stored neatly in those little jars. They are, as far as I know, nearly indestructible. We have a stone floor in the kitchen, have dropped the occasional glass, and none have broken. They can be used in the freezer, oven or microwave. I love them. OK! I'll stop! (I promise, I don't work for Luminarc!)
    Nope, I work at home all day.....making bone broth and such. And speaking of bone broth, I'd just like to share that after trying various methods for cooking my broth, I have finally decided that my favorite method is making my bone broth in a larger Instant Pot. My husband doesn't like the smell of broth cooking in the house, and besides, our stove is a commercial, gas variety and is hard to monitor and keep to a low enough simmer, so both the stove top and the crock pot methods didn't work well for us. A few years back I resorted to buying a huge (and rather expensive) electric soup kettle (like the kind you find at buffet restaurants- the black ones with the lift up lids) and it worked really well for cooking big batches of broth outside. But it was a hassle to clean and transport in and out of the house, especially after I tried (and loved!) making my broth in the Instant Pot. Like you, I tend to wait until I have at least 3 carcasses and various other parts before I make a batch of broth. My 8 qt. Instant Pot fits these perfectly. When cooked on low pressure for 240 minutes (a setting that is available for the larger Instant Pot, though the smaller one I have only goes to 120 minutes and so must be put through a second cycle for the identical, but equally good, cook) I get PERFECT bone broth every time. I have a grass fed farm source for chicken feet, and have used them many a time, but have found that I no longer need to use them when I make broth in the Instant Pot. The bone broth that I make in the Instant Pot is always super gelled - like, eat it with a fork gelled, once refrigerated - and it is consistency so - I just toss all the ingredients in, set it, and literally forget it until morning. The low pressure setting and the 240 minutes length of time is spot on perfect for making perfectly cooked broth every time. I know Instant Pots have 'gone viral' and so have kinda lost their 'magic' factor, but nevertheless, that large Instant Pot is right up there with the Luminarc glasses in being one of the best things I've ever purchased.
    ALL that being said, I do want to add that I loved your video! As an avid bone broth maker and drinker, I may not have needed your advice on bone broth making but I loved watching it all the same. I'll continue to watch your other videos because I am willing to bet that you've got lots of other great, interesting advice to give, and because you're a pleasure to watch!

    Hi Mary, thank you for all you do! You have added such value to the food I cook for my children. As an avid gardener, I can tell you that Chloramine does not gas off like chlorine does. It needs to be filtered out with a carbon filter. For those who are concerned about this, you can go online and look at the water report for your region and see if they add chloramine to thee water supply. Not sure if this has been commented on but there are too many comments to syphon though! Thank you so much again!

    Mary, this is great to learn. I think I want to start drinking bone broth daily as well. I have some troubles with my gut sometimes and maybe this would help along with the kombucha of course. I do make chicken bone broth, but you have schooled me on some things that I could do better. Didnt know about putting acid in. In addition, i was cooking it way too long. Lastly, with the reduced cooking time i can make that extra batch you talked about. All wonderful things to know. Thank you so much! God bless you!❤
