Hi Ivana, The grilled fish on your plate was Torpedo Scad or Ikan Cencaru. It taste better if you dip its flesh in Air Asam Jawa (tamarind sauce). The long winged bean is Kacang Botol or 4-angled bean. I just want to say.. Millions thanks for promoting our food to the world. Both of you are awesome.
To Ivana: pro tips - put the tempoyak into the budu plate, then crush the chilli and squeeze out the lime juice, do a lil mixing, and dip your ulam in it. You’ll looks like a local soon

The grilled fish ivana ate is cencaru. The dish is called cencaru belah belakang and stuffed with coconut fried with shallots and spices. Mmg sedap lah ikan tu cicah air asam. Some ppl add belacan in it.
1 tips for u guys is that eveywhere u go in Malaysia. Every food that u eat that has rice, are recommended to mix it first and then eat. That's how to fully feel the taste the food in Malaysia. You can eat it separately but mix it will give it another level like budu, tempoyak and etc mix it well with any type of gravy that on ur rice u gonna love it. Hardly to taste bad when u mix it.
Tempoyak + budu + sambal belacan + ulam + hot rice + fried fish is my favourite combination involving tempoyak. Whenever tempoyak is involved, I end up eating more than usual. I got two jars of that yummy tempoyak in my fridge right now. Love that stuff!
My family usually add plain water to lessen the saltiness of budu. We also add minced lemongrass + sliced onions + minced bird's eye chillies + grilled fish fillets + lime/calamansi juice. That is 1 of Terengganu style to eat budu.sometimes we put tempoyak also in budu.
I have not heard of budu until I moved to Kelantan. I thought what voodoo are they talking about! Lol! I eat it this way - have a spoon of rice and top it with a bit of budu, a bit of tempoyak, a petai and a bit of fish meat/chicken. Put it all together in one mouthful and it will blend in very well, the flavour will burst out when mixed. If u eat without mixing with rice, it doesn't bring out the full flavor. The budu itself is very3 salty. You wouldn't want to see how budu is processed though... Have fun and enjoy! Both of your reaction is hilarious.

Malaysians love flavour. As a Malaysian it takes time adjusting to blend foods in other countries. Foreigners sometimes take time adjusting too, multple friends told me that Malaysian food is too flavourful, but after weeks they learn to love it.
Sambal belacan, tempoyak, budu, cincalok r some of Malay fav condiments n table sauce. They complements d daily simple comfort food. U guys really eat like d locals.
You dip ikan bakar to the budu or pour little bit of budu on to the rice.You don't dip ball of rice into budu as the taste will be overwhelming. You eat budu or tempoyak together with rice as they not really worked as a dip. Ivana got it right. She look like a pro. Plus, you can squeeze the lime wedge to reduce the fishiness taste and smell. How about try some cencalok (fermented krill) later.
The way Ivana eat is the right way.... Nasi + fish dig into budu after that with ulam at end..that's the combo...ulam is to cover after taste of Budu/tempoyak..
I read from somewhere that Budu could possibly be the grand daddy of all famous fish sauces like the thai fish sauce and to an extent, the Worcestershire sauce.
1) Locals mix tempuyak and budu most of times 2) I have to dilute the budu with lime and add chilies else too strong. So I don’t blame you if you don’t like it 3) I stopped taking budu for almost 10 years because it inflamed my sinuses. So keep away from it if you are allergic to it
I being living almost 20 years in terengganu and i never had a chance to try the food at that place... Its look awesome, and thanks to recognize the most delicious tempoyak in Malaysia FYI we called the fish - Cencaru and we dip Budu with the Ulam not eat by its own.
For your info, budu is made by the quite same proses of the wostershire sauce ( Ln P) sauce.. Seriously hahahhaa... But budu is eaten in early stage but wostershire is fermented quite longer until they got clear dark taste n colour.. I've learn it in natGeo
9:43. Ulam Raja (Malay) or Cosmos (English). The one we eat is with pink flowers, the edible one..thos Cosmos with yellow or orange colors are not eaten, don't know why. I plant some in my home in KL..

I grow Ulam Raja/Cosmos in my yard, coz I often make Nasi Ulam Utara (Northern Herbal Rice), a specialty from my home state Kedah where we put at least 10 types of shredded herbs in rice and mix it well with other flavoring ingredients added. Best way to try budu is with fresh cucumber, or dip with crunchy turmeric fried mackerel. You gonna love it.
