    Wow I am in love with that garden bed setup that you can access from every side! We enjoy using Thai basil in cooking and making tea with lemon balm.

    Mexican mint marigold is a heat loving, drought tolerant plant that can be used as a tarragon substitute. I have 2 in ground as landscape plants by my house and they’ve survived our colder than normal Texas Hill Country winters. I mainly got them because deer aren’t supposed to eat them, but mine do nibble on them when they’re the only green thing in our heat. I have a rosemary, Gorizia variety, that I also have in my flower bed right outside the front door, and even our hard freeze and snow a few years ago didn’t hurt it. I love it because the leaves are slightly wider and to my delight, it is growing more like a medium shrub so works great there. It bloomed gorgeous blue flowers all winter and the bees were ecstatic. It is on the south side of our front porch so does get a little protection from north winds, but it is one of the very few plants that deer will not eat here, so is commonly grown in the landscape. I got it as a 4” pot at the grocery store 5-6 years ago and it’s about 3 feet tall and maybe a bit wider.

      @@lynettevaldez5683 I don’t have any seeds, unfortunately, but if you do an online search there are some places it can be ordered…True Leaf Market showed up as one but there are others. I bought my plants locally and they seem to get snacked on by deer about the time they bloom in the fall…and they’re supposed to be deer resistant. My deer don’t read those lists! When researching it, you should also see if it can survive your winters. I live in South Texas where it is a perennial.

    I grow lemon verbena every summer just to enjoy the intense lemon fragrance when I rub the leaves between my fingers. It can be used to make tea.

    I like to grow the lettuce leaf basil. It’s a milder flavored basil and makes great wraps in the summer. I agree with mint becoming a weed. My friend planted it in her raised bed and it took over the entire bed. It took her three years to get rid of it. I would also be careful with chives. It’s can takeover a container.

      I’m trying the lettuce leaf this year as well. I’m honestly not a huge fan of the taste, so I’m glad to hear that it’s milder. Growing lots of different types of basil for eating and ornament.

    Anise hyssop is great for pollinators and I love it in tea.

      I certainly don't use it all! Mainly, I harvest it in the spring and dehydrate it. I use that for teas. It's amazing at calming stomach issues for me. In the summer, I'll add a fresh sprig to cold ice water for a refreshing treat. I also add it to vinegar to create a homemade all-purpose cleaner.

    I love lovage - it’s great for soups, broth and when you boil potatoes. In Denmark we call it ‘Maggie herb’ because it add flavor to any savory dish. It’s a tall pretty plant, and it is perennial in most zones.

      @@thebeginnersgarden I finally found it in my local nursery in Truckee, CA last summer. I have tried to sow it outside from seed packets I brought back from Denmark without luck in the past.
      This winter I tried to sow it as part of my winter sowing experiment, and it has sprouted!
      I’m in zone 6a, with very harsh weather conditions, last frost date June 20, and my Lovage from last year is already about 10” and weathering night temperatures down to low 20ties!

    Basil is my favourite!! & I always grow plenty for pesto.
    I also have garlic chives, lemon balm & aloe vera (if that’s classed as a herb?) for those Aussie sunburns!!
    I’ve also just started some valerian seeds. I’ve never grown it before, so thought I’d try something new!!

      I grew Valerian a few years ago! It did great the first year but by the time I wanted to harvest the roots, I think it died maybe? It was in a very poor area of my garden, but marshmallow thrived there. I would love to try again.
