Serves: 4
Time: 15 mins
250g Dunnes Stores Fresh Tagliatelle
75g butter
2 garlic cloves, finely chopped
500g cherry tomatoes, halved
3 sprigs thyme
100g parmesan, finely grated
Small handful basil leaves, to serve
Sea salt and freshly ground black pepper
Bring a large pot of salted water to a boil. Cook the pasta according to packet instructions or until al dente.
While the pasta is cooking add the butter to a large sauté pan and let it melt. Once the butter is a deep brown and smells nutty, add the garlic along with the tomatoes and thyme, simmer for 3-4 minutes or until tomatoes have cooked down a bit and created a sauce. Simmer until slightly thickened.
When cooked, transfer the pasta to the sauce along with a little of the cooking liquid and half the parmesan. Toss until all the flavours marry together. Season to taste and then serve in wide bowls with the basil leaves and the remaining parmesan.

I would blend it as i love creamy sauces And evenly coated pasta ❤ but i bet it would taste amazing
What I don't like it about this type of tomato sauce using grape tomatoes are the tomato peele in the end they have the kind texture resembling plastic the same thing happens with the roasted bell peppers if I don't remove the skin.

Greasy mess. The only thing you have to do is make sure the water is boiling hard when using fresh pasta and your water was not. Instantly ruins the texture since fresh pasta cooks in a minute to two. Learn to cook bro, your water wasnt even boiling hard.

Should you not put a small drop of oil to stop the butter from burning?
You don't need to if you catch it just when its going brown and throw in the tomatoes ....The moisture from them will stop any burning. Also fine to throw in a tablespoon or 2 of the pasta water at this point to help it not go any further. The water from the tomatoes will do the rest!
