Having cooked chicken on hand is a life-saver. I cook two whole chickens in the crock pot every two weeks. On high for four to five hours with some seasonings and a few cups of water. Debone all the chicken (package that up) and throw all the bones and skin back into the crock pot with onion, celery, carrots, and a couple bay leaves and cook on low for 24 hours for THE best chicken stock (bone broth) for future recipes. @@jacobandellie I am just now seeing this. I use a little bit of salt, pepper, garlic powder, a bay leaf, and sometimes, a little thyme. But you could use whatever sounds good to you. As far as storing, I divide it up and place in freezer bags in portion sizes that suit our family. I usually keep a couple bags in the fridge to use relatively soon, but the rest go in the freezer. We use this cooked chicken for quick casseroles, soups, enchiladas, quesadillas....anything. I posted my original comment two years ago and I still do this. Blessings!

I accidentally donated my own clothes when I was changing rooms with my grandson I freaked out could hardly sleep all night but now I accidentally have a closet with about the same amount that Dawn has just not on purpose 😄 those were my favorites but I'm good I'm good God showed me that things are not the most important things in life. HE's so wonderful always comes to the rescue. points out the important things

All of these recipes are ones we enjoy to, the only one I haven’t tried yet it the wild rice soup but it’s a rainy day here today and I have everything on hand to make it so I’m excited to try it! You mentioned enjoying the bbq chicken over sweet potato, I also do that with pulled pork ( amazing!) Another variation of shredded chicken we do which would totally work with the taco chicken you make is taco bowls! Rice topped with the chicken and all those yummy toppings!

And for easy soup -we add a jar of salsa for the “veggie base” and we add more veggies. We make noodles on side. And add them to each bowl . Dont keep noodles in the remaining soup. They explode and drink up all the soup. So we keep them separate. 🙌🙌❤️❤️❤️. Your son is a cutie. Loved these ideas.
I made the wildrice and mushroom soup tonight. It had the best flavor! I don't know if it's because I baked the chicken first instead of boiling it. I followed your recommendation of baking several pieces at once for future meals. Great tip! Been married 34 years and I'm still learning! Would love more easy,quick meal videos, especially using instant pot.

this is something you might like..1 can rotelle drained..1 can black beans rinsed..1 tsp cumin..1 tsp salt or to taste..1 TBS olive oil..and just mix. my family loves this with tostada chips.. got this recipe from Natural grocers.

We have had ground beef tacos, and those are quick. I would like to try these chicken tacos. I have made a chicken enchilada recipe, with a green enchilada sauce from Walmart. Most everyone who tries it has liked it.

There was one place for like one second you little guy's face was visible beside you, tucked under your arm. It made me smile. Little ones are SO MUCH WORK, but believe me are SO WORTH IT. Mine are all in their 20s now and while they are so enjoyable as adults, I do miss those little faces looking up at me.
Thanks for the ideas and recipes! I have been using Italian dressing mixed with minced garlic as seasoning for pretty much all my meats, and then throw them in the oven. Makes for easy easing and it’s very flavorful. I keep an eye on finding Italian dressing with the least amount of sodium. The kids love when I cut the chicken breast in like small cubes and cook it in the pan until it gets a little brown. It’s our version of “chicken teriyaki “.
Shredded chicken is one of my favorite go to prep foods. I always love cooking chicken and shredding it and we can eat on it all week. This is especially helpful when my military husband is deployed and the kids and I are doing all the things alone and I just want to go out to eat. I always tell people about simple shredded chicken when they ask for recipes.
One of my kids favorite with the shredded chicken is chicken wraps. We go heavy on the fillings like lettuce, tomatoes, cheese, spinach wraps, sour cream, etc. They love them!

I love your recipe ideas with shredded chicken! I often cook a lot of chicken in the Instant Pot to shred and freeze in 2 cup quantities. (chicken, chicken broth, onions and garlic. Manual pressure for 12-14 min. Shred and cool.)

Husbands and kiddos are so high maintenance! So funny about slowly getting them used to veggies. I like just buying a rotisserie chicken and doing a ton of recipes with that. One chicken is good for about 3 meals - just chicken served as is, tacos/chicken salad/etc, and the bones to make a soup. I actually have extra instant pot liners so on the weekend I put together meals and they just get popped in the pot the morning of, let it cook and then let it stay warm until dinner. Works great!
I like to make slaw and eat my shredded bbq chicken with it. I will mix them together on my plate before eating it. I eat low carb so this was an alternative to a BBQ sandwich for me.
Since you're trying to cut back on bread I HIGHLY suggest sweet potato toast!!! Just slice a sweet potato up like a loaf of bread (I like using my mandolin for even slices), very lightly cover both sides with olive oil, and bake in the oven until it's how you like it. Then throw some scrabbled eggs on top (Gordon Ramsey's style scrabbled eggs are AMAZING on sweet potato toast!) and it's super yummy! The extra slices store well in the fridge for another day.

I have been using your meal planning tips and grocery template for a couple of months now. What a timesaver. I like to cook, but meal planning is so overwhelming when the weeks and evenings are busy. You have made this so much simpler for me! I have given myself permission to take the easy way most nights and to only cook involved meals once a week. I thought my family would care that we repeat the same meals over and over, but they don’t at all. I should have known bc any time I have asked my husband what he wants on the menu for the week, he ALWAYS asks for Mexican food. The pressure I previously put on myself to do a lot of variety is off and everyone is happy.
Yes we all want to be good mothers. Did you catch Dawn's comment about the grapes on the side of the tacos - because she wants to "be a good mother". Ha, ha, ha. I used to do that too! For the same reason.
I have been doing something similar! But I put the chicken breast in the crocpot with a little bit of chicken broth, garlic powder, onion powder, salt and pepper. I've used the shredded chicken to make overnight baked taquitos/flautas, used it as terriaki chicken with rice and stir fried veggies, used for bbq chicken salad, quesadillas. These are great ideas I'll definitely be making the bbq chicken potatoes! Trying to make dinner faster, but it's hard when my husband has to have a meat, veggie, and carb, for every dinner 😵

I love this!! I love to put a pork tenderloin in the crock pot. When I pull it out it shreds itself. I am always looking for shredded meat recipes. I will use some of these recipes for sure!!

I like to make slaw and eat my shredded bbq chicken with it. I will mix them together on my plate before eating it. I eat low carb so this was an alternative to a BBQ sandwich for me.
I make the parm chicken a lot. I sprinkle Italian bread crumbs on top after spreading the mayo mixture on it.
Salad kits are great! If you don’t like the sugar amounts (me neither) just use your own dressing! 🙂
Since you're trying to cut back on bread I HIGHLY suggest sweet potato toast!!! Just slice a sweet potato up like a loaf of bread (I like using my mandolin for even slices), very lightly cover both sides with olive oil, and bake in the oven until it's how you like it. Then throw some scrabbled eggs on top (Gordon Ramsey's style scrabbled eggs are AMAZING on sweet potato toast!) and it's super yummy! The extra slices store well in the fridge for another day.

I have been using your meal planning tips and grocery template for a couple of months now. What a timesaver. I like to cook, but meal planning is so overwhelming when the weeks and evenings are busy. You have made this so much simpler for me! I have given myself permission to take the easy way most nights and to only cook involved meals once a week. I thought my family would care that we repeat the same meals over and over, but they don’t at all. I should have known bc any time I have asked my husband what he wants on the menu for the week, he ALWAYS asks for Mexican food. The pressure I previously put on myself to do a lot of variety is off and everyone is happy.

Yes we all want to be good mothers. Did you catch Dawn's comment about the grapes on the side of the tacos - because she wants to "be a good mother". Ha, ha, ha. I used to do that too! For the same reason.
I have been doing something similar! But I put the chicken breast in the crocpot with a little bit of chicken broth, garlic powder, onion powder, salt and pepper. I've used the shredded chicken to make overnight baked taquitos/flautas, used it as terriaki chicken with rice and stir fried veggies, used for bbq chicken salad, quesadillas. These are great ideas I'll definitely be making the bbq chicken potatoes! Trying to make dinner faster, but it's hard when my husband has to have a meat, veggie, and carb, for every dinner 😵

I love this!! I love to put a pork tenderloin in the crock pot. When I pull it out it shreds itself. I am always looking for shredded meat recipes. I will use some of these recipes for sure!!

Learn how to make rice from plain rice (any kind) and you will save money. I use the steam method in a pan with lid or in frypan (water of course) xx

The Oven Baked Chicken Parm sounds delicious except for the mayo. I'm going to try it substituting Plain Yogurt for the Mayo and see how it is. Thanks for these recipes and videos!!
