For an awesome pork sandwich experience, I like to cut the Pork Belly in to two separate pieces. Use different dry rubs on both. Smoke them together, pull one out around 190 and pull the other out around 205. The 190 pork belly will make amazing slices, the 205 pork belly will be pulled and sauced, and then placed on to of the slice pork belly. Put on some pickles and grilled onions, BAM!

On this cook, I learned that I really need to put a grill grate probe near the meat so I know what the actual temp is where the meat is cooking instead of going by the Weber thermometer. Live and learn!!! The belly still turned out fantastic regardless of how long it took to cook. LOL

I'd never done pork belly either Jason. It was a fun cook and the smell was unbelievable. I will be using a grill grate probe next time so I can tell what the actual temp is where the meat is. You are going to love that Slow "n Sear. It will easily do 12 hrs low & slow. Cheers to ya brother!!!
@T-ROY COOKS hello again sir..can you please do a video about pork belly with crackling skin..watched a bunch of videos and tried to replicate a high heat start on the offset smoker about 450 to 500...for 1.5 hours down to 250 for a 5 hour finish ...pork itself turned out amazing but the skin stayed soft and had to broil it to achieve crispy skin after ..I did a 24 hour rock salt top to the skin after a brush with vinegar and scoring the skin ...wondering if its near impossible to achieve on the smoker ...I did however leave the belly whole at about 10 pounds ...maybe I should have made into more of a couple 5 pound pieces ...you are the man! keep it up

I use two bricks to make my own "slow n sear" doing some spare ribs right now. I've other cookers but my Weber gets the most use. Prob made 100 butts on her. Love it

Webber should make a plate that goes on a slow and sear on the top that has ridges like a potatoe chip ..the plat should be halve the circumference and the rides should bend like halve a circle aide in the left to right burn help circulate the smoke and creat a environment were the whole surface can be indirect cooking with some relief spots for the smoke to circulate up if there was ceramic under the plate it could help keep the temp the same across the board...be like a mini hybrid mountain ...one can dream

Not easy task eh? haha I just got back from my RV honey moon to Quebec City with my new wife and ofcourse... i brought my kettle!! man, these kettles are so versatile!! Made some sausage, steaks and even low and slow beef ribs!! Just set and forget while i went site seeing!! Why eat out?? (we did a few nights tho lol)hope to see more vids on the kettle!

Hey T-ROY, I have the slow 'N sear also. I have found the temp that the lid thermometer reads is way different than what you are actually getting at the grate, its a lot lower at the grate. That may be part of the reason it took so long. I've been running remote probes with mine. But I love my slow 'N sear. I also started following Kyle at patriot BBQ too a couple weeks ago because of you. And I love your channel man keep up the great work.

How I wish this video would have been posted just a few days ago. Mercy had a Pork belly in the fridge, and I didn't mind that she cooked it in a skillet on the stove... On the STOVE! Now I'm kickin' myself for not suggesting we cook it out on a Weber. It was just one of those things, I guess.

I'm addicted to your channel.....I'm from the UK and since grillstock kicked off BBQ as in BBQ not grilling has really started to become popular. A couple of me and my friends are obsessed..I have a big charcoal BBQ that I use for grilling and offset smoking, a vertical smoker, a gas grill and I am planning to buy an offset smoker before the end of the year! I'm totally hooked and your stuff is awesome. What's your top tips for novice BBQers like me?
That's great to hear Tom!!! I'm glad that you guys in the UK are really getting into BBQ. There aren't really any tips or tricks per say. The main thing is to learn your cooker which means lots of practice. I will say that Pork Butt (Shoulder) is the easiest and most forgiving cut you can cook. Pork ribs would be 2nd. Brisket is difficult at first, but after 5-6 cooks, you will get the hang of it. Also, it helps a lot to get the best grade of beef that you can when it comes to brisket. Chicken is one of the hardest things for me to cook/smoke. It's difficult to get the meat done and also get the skin crispy without overcooking it. Again, practice a lot and you will find a lot of joy with your cooks. I wish you much success and thanks very much for the support!!! Tell all of your friends I said hello!!! Cheers, Troy
I have never cooked porked belly before but I'll tell you after watching this I'm going to plan to do it sometime soon... I just bought two tri-tips and plan on cooking them today, I'm doing one based off your previous video and one with salt and pepper since I have never cooked it before.

Saw these pork belly's at my local butcher and they had the skin on them, next time I'm there I'm gonna get me some and try smoking them. Thanks for the video.
I'm making one tonight, for tomorrow. THANKSGIVING! Whole sucker too like 11lbs. No wrapping nothing like that its gonna go as long as the brisket. Using a 18.5 wsm. Bricks in the water pan. If someone replies I will update this when the cook is done. Got a prime brisket too... only thing I'm not sure about is which one will be on top and which one will be on the bottom ????
Only place that pork belly would taste better was if you were sitting at a camp site with a fire going, just wasting time between trips to run the trot lines. Looks great, Troy.

Hey Preston, the pork belly was amazing!!! I was blown away with how long the Slow 'N Sear maintained temps without adding more fuel. It could easily do 12 hours. Try the snake method sometime Troy. Mine holds temp like a champ that way. More of a pain to set up but takes less baby sitting. Check it out! Thanks for the excellent videos!

So you don’t worry about the internal temp because you check by feel but when it gets to 200deg internal temp it’s done. Why not just use a skewer to probe for tenderness since you don’t cook by temp?
Hi Troy, that looked like a tasty piece of pork belly. Funny you mentioned not having any skin on the pork. My wife is from Michigan and so we used travel back to visit family quite frequently and I noticed that most of the pork in Mi was skinless as apposed to here in OZ where nearly all pork comes with skin. When questioned she thought it was a local thing but now I wonder !!. What is the norm with skin on pork ? here most pork is sold with the skin, Belly, chops and all roast cuts.

I have a question for you: we just moved to Missouri a couple months ago, and are running into disappointment with the local meat selection. Do you have any advice on how to find a good butcher shop in a new-to-you area?
Hey there, thank you very much! I am still getting used to not being on call 24/7. LOL Please tell Enaam hello and I miss her as well. She's such a sweetheart!!! As for meat, I know that Costco has good meat, so if you have one in your area, you may want to check it out. You may also be able to find a butcher shop in a local small town or city that sources their meat from a local rancher and they may have good meat. If all else fails, there are meat purveyors online that will ship you meat. All my best to you guys!!! Cheers, Troy
T-Roy once you use the slow n sear with steaks you won't cook with anything else. I've used it for brisket, ribs, pulled pork, and anything else when I grill anymore. The pork belly looked awesome as well.

Dang that looked wonderful!! I did a Pork belly it came out so bad (Very Dry and rubbery and tasted like ham) The video I shot was never put together. Now you got me wanting to try again!!! Dang that looked good!! I think I may have a pork week!! Already got some Pork chops (gonna do in the Sous Vide) Jonesing for some Pit barrel Cooker Ribs and now gotta try another pork belly!! The slow-n-Sear is a great product... It just sucks to get one outside of America. These things go for as much as an entire 22.5" kettle up here in Canada!
