- These salads keep well when prepped (up to 5 days), so they’re perfect for some easy meal prep! In this video, I’m making my 3 favorite meal prep salads right now and also showing some really simple things you can do to make salad last longer. These are very easy, but they really do work!

If you're allergic to peanuts like I am -- I use almond butter for the Thai Salad -- and it's just as good, imo!

Perhaps a suggestion for anyone who doesn't want to use the spinach in the pasta salad (or not have to add it on the day of eating and have it ready to go) could use massaged chopped kale. I feel like that would probably work well too but I haven't tried it yet 😅
