I'm T2 diabetic and was super bummed because I thought sushi was a no-go for me because of the rice. Then my old doctor pointed out all the other ingredients and overall how little rice there was. It's one of my favorite meals and is super filling. My local grocery now makes it fresh so I have it about once a week when nothing is planned for dinner.

I'm diabetic and I enjoy rice quite often. It's about portion control and making sure you pair the rice with a protein and vegetables. That helps slow the absorption of glucose.

It's just important to know there is a lot of salt and sugar- and don't overdo it with algae/nori- there is a fine balance with iodine and I know someone who developped hyperthyroidism from consuming too much iodine in sushi (he just assumed it was so healthy you could have it very often. To me it's a treat.

Do you mean the sugar in the rice vinegar or the starch in the rice? There's not that much rice, and literally all calories you consume must be converted into sugar for your brain and body to use it as fuel.
