      The sauce is unagi (eel sauce) and the powder is bread crumbs.

    Did you use a serrated santoku knife to cut this deep fried roll?

      I used a sashimi knife. Hold the roll well with your left hand and cut it instantaneously.

      You know that's a common plating style right? The sauce and crumbs are supposed to be artfully messy. It's much more interesting to our eye than complete perfection and symmetry on a plate.
