Thank you for this! I’m a fried catfish lover and needed an alternative. You’re the first video that popped up in the search and that is so amazing. All I searched for was oven fried fish.

Awesome recipe!! Like Julie I have a catfish story too :-) I would go fishing in the morning as a little girl and never caught anything. One morning a fellow fisherman having more luck than me took pity and gave me a huge cat fish to take home and claim as my own. It was 6 am on a Saturday and I ran into my parents room with it - excited as all get out - you can imagine my parents reaction. Ha ha ha ha!! Thanks for the great memory and amazing recipe!

I got this recipe from the Ebony magazine over 20 years ago! It called for olive oil to coat the pan. It’s a great one.

awesome I LOVE catfish funny thing though, when I was a little girl I used to go fishing at night with my dad ,uncles, and cousins and every time they'd catch a catfish they'd throw it back in the water, and complain that there were too many catfish. this recipe looks so good, I'm going to give it a try.

Your fish looks fantastic but . . I just had to look up Pam and what is in it, you might want to do the same. It seems that the last ingredients are isobutane and propane to get it into a spray form. I don't know about you but I'd rather just take some evoo and put it into a spray bottle and give it a squirt or two.
I get what your saying, but if you searched up every content of every product, believe me when I say NOTHING would seem safe for consumption.
in regards to Pam and other sprays, it's ok to use it as directed by the video.

They sell Olive Oil Spray and it states its use for spraying onto food. But I do not recommend spraying PAM on food. It will make you sick.

You can use coarse polenta. That will give you a good coating and crusty exterior.

I prefer to put the oil into the bread crumbs before coating the fish, look up Jeff Mauro's oven fried onion rings, same technique works great with fish.

I always place it in the center of my oven. The cooking spray is only to give it that fried appearance. So you can skip it if you want.

Yes, you can use any kind of white fish with this recipe.

The use of cornmeal is to give it a crunchy texture, very similar to fried fish. You can still use flour but it won't have the same texture.

You mentioned celery seed in the video, but didn't include it in your recipe on your website. Can you tell me the measurement for the celery seed?

Vick Vick It all depends on the product. If it's a pre-made cornmeal breading that can also be used for baking, then the instructions on the box should tell you how to do it.
Would there be any downside to not spraying it with the cooking spray? I don't need it to look fried as long as it taste like what I expect...

Hi Aaron Bateman, absolutely! Spraying it with oil is just to make it look like it's fried but it doesn't alter the flavor at all. So you can leave it out if you want. =)

How do you keep the breading from sticking to the aluminum foil?
I use non stick aluminum foil, but you can also spray regular foil with oil spray or just brush a little bit of oil on it.

+Nina Beller, it's complete safe and it works the same way as if you were to spray the pan before adding your meat for sautéing.
Sure it's safe, cooking spray is liquid butter and oil. it's safe to ingest raw.

Way too many spices. Fish should only get salt and pepper ok breadcrumbs, but thats it and add lemon to it at the end. Sorry my opinion!

I do! It's delicious! And the rice is not pink, it's red.

Eat it with what you like! I just got a great sale on catfish (15lbs) and broccoli cheap and 4lbs various cheeses cheap too. I will be eating Broccoli and cheese with my fish tonight as well as other things on the side. I'll skip the rice though since I eat enough of it with beans or Mexican foods I cook also.
