Before you posted this I was feeling very defeated, it’s hard to find a job for a 16 year old that’s looking for home steading/ farming experience in an urban area when I don’t really have any physical experience besides gardening. But your videos always bring me back and remind me what I truly want. I know I’ll find my place but my patience is killing me lol. It’s always a blessing to see your videos, I truly idolize you. I sympathize. Try a nursery if there is one near you or if there is a farmers market. My daughter worked part time for one of the venders at our farmers markets and then ended up going to several in our county. We are not rural but she became friends with many of the farmers in our region and gained so much knowledge of the fruits and vegetables and other products they sold like jams, pies, juices, soaps, candles, etc. The vendors were all friends for the most part and talked during slow times or at the end of market. A nursery could bring you into contact with the growers and if there is time they will gladly talk to someone who is really interested. Winter is the slow time in many areas but it will give you time to research. Look up farms in the next county or more, see who sells at the market and where they are, what they sell. Read, watch RUclips. I wish you luck. It may take time to find what you want, may not be possible til college. Try looking at schools with an agricultural program, maybe go for a visit. They welcome prospective students. Go out on a limb. Contact Poly face farms, they have a large internship program. Ask him for advice. You will get there in time. Start saving money now, that can be the biggest hurdle in starting your own homestead. Sorry to go on and on. It is hard at 16 when you don't have the opportunity some do because of where you live. It may take a few years but if you stay interested and do what you can you will get there. I'll keep you in my prayers that a door opens up for you.
Good to know who u r at such a young age. Maybe you can volunteer at a animal shelter. That could lead you to a farmer or someone that is willing to give you some hands on experience. Best of luck life has a way of leading you away from your desired path. Hold true to who you are and what you want. Its ok to veer of path for a bit , but don't let life's hard times stop you from believing in yourself.

Here is a little trick I learned from my sister: When I end up with excess heavy cream in the fridge that needs to be used, I make a batch of whipped cream, spoon dollops on a cookie sheet, and freeze it. Then transfer them to a baggie so I have whipped cream for my coffee in the mornings!
Hi Jess, I grew up on a dairy farm out in California. God for bid any food go to waste. I have 4 boys myself. ( All grown now) My mom grew up on the Azores island of Portugal. Before milk or cream would go bad...😝 We would make Portuguese Rice Pudding. My boys loved it, I think yours would too. 6 cups milk or cream 1 cup white rice 1/2 to 1 cup sugar 1/4 to 1/2 cup butter 2 teaspoon vanilla (1 while cooking 1 stirred in at the end of cooking) Bring all ingredients to a soft boil stirring constantly. Reduce heat to simmer, sir occasionally (10 to 15 minutes) When it begins to thicken and rice is cooked about 30 minutes to an hour, pour into glass dish or individual dessert dishes. Sprinkle with cinnamon or nutmeg or both. Can be eaten warm, room temperature or cold. Hope you try it, Belina

I never heard of that rule about breakfast, I have had everything from leftover pizza to a piece of cake (with frosting) for breakfast, even a cold spaghetti sandwich to eat on my way to school. I figure if its there I'm going to eat it no matter what meal it is. 😄
My little grandson LOVES my "dirty" hoodie and this year was his first time pulling roots out of the garden and putting it all together in his head. You have no idea how excited this kid will be to have his very own dirty food hoodie!!!! Thank you!!!
If you use soured milk to make cheese like ricotta you can actually make an even better product that in Estonia we call 'kohupiim' which is used by pastry chefs to make the most amazing cakes and other sweets.
My mum often made cheese from soured milk. Just leave it somewhere warm snd it’ll start to separate on its own, then strain through muslin and that’s it’s! Done! Easiest cheese ever. PS - make excellent cheesecake.
Jess there is No Way your videos would ever be “To Long”! Would love to watch more of the stuff - Even if you’ve done it before - Ricotta etc. you prob know and Super Great to feed whey to pigs but it is wonderful to use in place of water in homemade bread. Love all you and yours do🥰

Whip that up in a blender and you get the foamy froth at the top of the drink. That was my favorite breakfast of all time. Back then we didn't have to worry about salmonella on the eggs. And you probably don't either since yours are farm fresh eggs. Blessings!

The fellow giving us a tour asked us if we knew why the chocolate milk you buy always tasted better than the chocolate milk you made at home with syrup or powder. Of course we all said no. Then he said it was because they used the milk that was beginning to sour to make the chocolate milk they sold and that the sour flavor from the milk was the difference. I always remembered that and tried it once years later with milk in my refrigerator that had begun to sour. I added some chocolate syrup and durn if he wasn't right. It tasted exactly like commercial chocolate milk!

My grandmother did it the old fashion way all the way. She churned with a crock and dash and the butter came to top. I still have her butter molds. Times have sure changed.
It might sound weird, but aging the eggnog in the fridge really helps enhance the flavor. Mix up your favorite recipe (I use rum, bourbon and cognac in mine but the booze is optional) and stick it in the fridge or a similar cool place for up to a couple of weeks. The flavors blend together beautifully and there's no harsh edges to it.
My mom taught me to make our egg nog with a gallon of milk and a dozen egg yolks. Heat the milk. Beat the eggs and temper them with the warm milk. After tempered add eggs to milk. Cook until desired thickness. Add spices to taste.
We usually separated our milk right when it came from the Cow, so we didn't have to heat it. My favorite thing to do was stand there with two glasses and catch enough of each to drink. .LOL

Hi. Mamma Brand here. Remember I mentioned using the cooler to chill the milk faster either forgetting and freezing and breaking bottles? Well the inverse works well to pit hot tap water in the cooler to pre-warm the milk for separation. Depending on how cold your fridge is, and hot your hot water is, you may need to adjust the temp of water so as not to break the bottles. Best of luck!
I've made eggnog for years what I do is put a dozen eggs in my blender and a 1/2 a gallon of heavy whipping cream some homemade vanilla, About a 1/2 a cup of sugar or more to taste Plus enough cinnamon to your liking or any other spices like nutmeg that you would like blend refrigerate And enjoy!

My go to eggnog recipe is from Cooks Illustrated. My family loves it. I drink about 2 oz a year, lol. I'll do my best to cut and paste here: 1 tablespoon vanilla ½ teaspoon fresh grated nutmeg, plus extra for garnish ½ cup heavy cream, whipped to soft peaks Instructions 3 Immediately pour custard through fine-mesh strainer into large bowl; stir in liquor, vanilla and grated nutmeg. Cover with plastic wrap and refrigerate until well chilled, at least three hours and up to three days.
When my son was small he went with my mom to see a old time fire engine pulled by horses and with Dalmatians riding on the cart. He explained to me that there were mashed down puppies on the fire engine 🚒😂. I've called Dalmatians mashed down puppies since that day.

Homemade eggnog is completely different and so delicious with ice floating in it! We used the Little House recipe, I will come back and put it here :) Edit: it's in the replies
Here it is! It's served with ice which I think is essential. I hate store eggnog but this is delightful. It was actually served during the summer because it is so hydrating. 6 eggs, separated 1/2 cup sugar 1 quart whole milk (I bet you could use the "skim" if you're using raw milk like Jess, it will turn out plenty rich anyway) 2 cups heavy cream ground nutmeg for topping Whisk the egg yolks & sugar together; add milk and cream, and keep in fridge to chill. Beat the egg whites to soft peaks - not stiff, just until everything is fluffy. Fold gently into the egg yolk/milk mixture. Add plenty of ice and top with nutmeg.
We milked between 60 to 70 jersey cows in the 1960’s. We separated the milk as we milked the cows. The cream went to the factory and we fattened pigs with the whey. Then it all changed and the whole milk was picked up from the farm. 🌻🌻💕💕
Here’s a delicious homemade eggnog recipe that I’ve used for over 20 years… 4 eggs 2 cans sweetened condensed milk 2 teaspoons vanilla 1/2 teaspoon salt 2 quarts whole milk 1 pint whipping cream In 6 quart bowl, beat eggs, condensed milk, vanilla and salt gradually. Then gradually add 2 quarts of whole milk and mix well. In separate bowl, beat whipping cream until stiff, fold into other mixture with spatula leaving lumpy. Shake nutmeg over top. Makes one gallon. I’ve had so many people tell me they’ve always disliked eggnog until they tried this.
My southern Tennessee mom would always compliment the family's achievements by saying, "cream always rises to the top". Now that I'm older, I say that to my grandkids too.

We used to do that back in Romania let the milk stay out on the counter over night and made butter milk and drink it like that or strain it and make cow's cheese we called it ...here is farmer's cheee....so good. We used it in cakes and stuff or just ate it like that. We tried to do that when we came to America and the milk was stinky in a bad way....ugh. Miss that.
I have an "egg nog" recipe that my mother got from a ladies church event many years ago. Its more like an ice cream drink and we never add egg because we don't like the idea of raw egg in the drink. It was listed as optional lolol 4 cups cold milk 1 can sweetened condensed milk Heavy whipping cream Sugar Salt Cinnamon (optional) Nutmeg (optional) (Your fave holiday seasoning, get creative if you want, pumpkin pie seasoning? Lol) Mix milk and sweetened milk well. Add cinnamon and or nutmeg to taste, mix well. Add a pinch of salt. Whip heavy cream and sugar to taste. Fold the whipped cream into the milk mixture careful to not break it down too much. It should have cream lumps. Serve and enjoy. We LOVE this "egg nog" and have it every year multiple times through the holiday season. Simple, deliciously sweet, and comes together quickly. I suppose if you want an egg in it you would add it to the milk mixture prior to adding whipped cream. ✌❤

I’m 62. When I was a kid my Mamaw would take raw milk from Lady Bird ( their milk cow ) and put some in a bowl or jar and cover with cheese clothe. Set it on back porch table and let it turn to Clabber. I remember her using it like buttermilk, for cheese etc. always delicious!

My step son came home this past weekend and wanted to make egg nog. How funny. Someone else commented that they used the Little House recipe and we loved it. It was also great kitchen knowledge for a 13 yr old who needed some egg nog just for him🥰
They have sure come a long way with cream separators. The one we had on the farm growing up was HUGE! There was no way you could have fit it on the counter LOL.
We always had good milk cows on the ranch. The milk was brought in and immediately strained and put thru the separator. Usually had 3 gallons per milking so we ate a lot of home made butter, ice cream and traded milk to the neighbor for baked goods.

When you started saying, "I got all these eggs and milk" in my mind I started making custard. My Grandmother and Mom were the custard queens. I just wanted to say this just because, 'No whey Jose." God bless you guys.
Mine were too, my Aunt was famous for her fresh strawberry custard, it was so good. You take your standard custard recipe and add fresh strawberry halves in it and bake as usual.
Omg I needed this. I just bought remnant for the first yesterday and some while fresh milk. I also just tried to make butter out of heavy cream from store but it came out crumbly but good but I rolled it into a log but is still crumbly! That’s for all you do!
So if a cake doesn't have icing is a breakfast cake. Your kid is a genius.

Well the inverse works well to pit hot tap water in the cooler to pre-warm the milk for separation. Depending on how cold your fridge is, and hot your hot water is, you may need to adjust the temp of water so as not to break the bottles. Best of luck!

I've made eggnog for years what I do is put a dozen eggs in my blender and a 1/2 a gallon of heavy whipping cream some homemade vanilla, About a 1/2 a cup of sugar or more to taste Plus enough cinnamon to your liking or any other spices like nutmeg that you would like blend refrigerate And enjoy!

My go to eggnog recipe is from Cooks Illustrated. My family loves it. I drink about 2 oz a year, lol. I'll do my best to cut and paste here:
1 tablespoon vanilla
½ teaspoon fresh grated nutmeg, plus extra for garnish
½ cup heavy cream, whipped to soft peaks
Instructions
3 Immediately pour custard through fine-mesh strainer into large bowl; stir in liquor, vanilla and grated nutmeg. Cover with plastic wrap and refrigerate until well chilled, at least three hours and up to three days.
When our kids were really little, our oldest son called Eggnog, EggDog lol...so forever in our family we call it EggDog!
When my son was small he went with my mom to see a old time fire engine pulled by horses and with Dalmatians riding on the cart. He explained to me that there were mashed down puppies on the fire engine 🚒😂. I've called Dalmatians mashed down puppies since that day.

Homemade eggnog is completely different and so delicious with ice floating in it! We used the Little House recipe, I will come back and put it here :)

Here it is! It's served with ice which I think is essential. I hate store eggnog but this is delightful. It was actually served during the summer because it is so hydrating.
6 eggs, separated
1/2 cup sugar
1 quart whole milk (I bet you could use the "skim" if you're using raw milk like Jess, it will turn out plenty rich anyway)
2 cups heavy cream
ground nutmeg for topping
Whisk the egg yolks & sugar together; add milk and cream, and keep in fridge to chill.
Beat the egg whites to soft peaks - not stiff, just until everything is fluffy. Fold gently into the egg yolk/milk mixture. Add plenty of ice and top with nutmeg.

We milked between 60 to 70 jersey cows in the 1960’s. We separated the milk as we milked the cows. The cream went to the factory and we fattened pigs with the whey. Then it all changed and the whole milk was picked up from the farm. 🌻🌻💕💕

Eggnog: 4 eggs, 4 tablespoons honey, pinch of salt, 1/2 teas nutmeg, 1/4 teas fresh orange zest, 1 teas vanilla, 1 pint heavy cream, 1 pint milk. Beat in food processor or blender or with an immersion blender. Enjoy!
Here’s a delicious homemade eggnog recipe that I’ve used for over 20 years…
4 eggs 2 cans sweetened condensed milk 2 teaspoons vanilla 1/2 teaspoon salt 2 quarts whole milk 1 pint whipping cream In 6 quart bowl, beat eggs, condensed milk, vanilla and salt gradually. Then gradually add 2 quarts of whole milk and mix well.
In separate bowl, beat whipping cream until stiff, fold into other mixture with spatula leaving lumpy. Shake nutmeg over top.
Makes one gallon.
I’ve had so many people tell me they’ve always disliked eggnog until they tried this.
My southern Tennessee mom would always compliment the family's achievements by saying, "cream always rises to the top". Now that I'm older, I say that to my grandkids too.

We used to do that back in Romania let the milk stay out on the counter over night and made butter milk and drink it like that or strain it and make cow's cheese we called it ...here is farmer's cheee....so good. We used it in cakes and stuff or just ate it like that. We tried to do that when we came to America and the milk was stinky in a bad way....ugh. Miss that.
I remember turning the handle for the cream seperater for my Dad when I was a kid ... fond memories
I have an "egg nog" recipe that my mother got from a ladies church event many years ago. Its more like an ice cream drink and we never add egg because we don't like the idea of raw egg in the drink. It was listed as optional lolol
4 cups cold milk
1 can sweetened condensed milk
Heavy whipping cream
Sugar
Salt
Cinnamon (optional)
Nutmeg (optional)
(Your fave holiday seasoning, get creative if you want, pumpkin pie seasoning? Lol)
Mix milk and sweetened milk well.
Add cinnamon and or nutmeg to taste, mix well.
Add a pinch of salt.
Whip heavy cream and sugar to taste.
Fold the whipped cream into the milk mixture careful to not break it down too much. It should have cream lumps.
Serve and enjoy.
We LOVE this "egg nog" and have it every year multiple times through the holiday season. Simple, deliciously sweet, and comes together quickly.
I suppose if you want an egg in it you would add it to the milk mixture prior to adding whipped cream.

Make pancakes with sour milk ..l never toss sour milk .l also bake with it every thing with sour milk is super delicious .....l never tell my kids this ....they love every thing l make with the sour milk .....give it a try
You can freeze milk too. When it thaws you just shake and drink.
My dad always made homemade eggnog from our own eggs and milk, non alcoholic of course, when I was a child. Best memories ever. Your kids will have beautiful memories too

I’m 62. When I was a kid my Mamaw would take raw milk from Lady Bird ( their milk cow ) and put some in a bowl or jar and cover with cheese clothe. Set it on back porch table and let it turn to Clabber. I remember her using it like buttermilk, for cheese etc. always delicious!
I grew up on a dairy farm and you reminded me of the butter fat left on the sides of your drinking glass after emptying my glass. Lovely memories

If you add whey to the water when cook your dry beans you increase the protein content drastically and it makes the beans a bit creamier!!
My step son came home this past weekend and wanted to make egg nog. How funny. Someone else commented that they used the Little House recipe and we loved it. It was also great kitchen knowledge for a 13 yr old who needed some egg nog just for him🥰
They have sure come a long way with cream separators. The one we had on the farm growing up was HUGE! There was no way you could have fit it on the counter LOL.
We always had good milk cows on the ranch. The milk was brought in and immediately strained and put thru the separator. Usually had 3 gallons per milking so we ate a lot of home made butter, ice cream and traded milk to the neighbor for baked goods.

Mine were too, my Aunt was famous for her fresh strawberry custard, it was so good. You take your standard custard recipe and add fresh strawberry halves in it and bake as usual.

Omg I needed this. I just bought remnant for the first yesterday and some while fresh milk. I also just tried to make butter out of heavy cream from store but it came out crumbly but good but I rolled it into a log but is still crumbly! That’s for all you do!
