The secret behind the name of the Cai Rang floating market in Can Tho city, the various local foods and delicacies in the local market and the process of making noodles in the noodle factory were all apart of the last reports on the beautiful Vietnam.
The beautiful city of Can Tho has a very beautiful and attractive floating market where they sell Vietnamese food on boats, such as rice noodles that are eaten as breakfast, as well as various fruits and vegetables such as durian, pineapple, coconut, jackfruit, etc. The name of the market is Cai Rang and the story behind this name is that in the past this river was full of crocodiles and a crocodile killed the wife of one of the fishermen and that fisherman killed the crocodile to take revenge and the crocodile's teeth floated in the river and in to the market. Local people call this crocodile tooth market, which, of course, does not have crocodiles anymore, but it has sharks.
In this market, they only sell fruits and vegetables. Various boats pass by, one of them sells jackfruit, as well as durian, the king of fruits, which I love. Although it smells bad but it's great for cancer and very juicy. For breakfast, they have a famous soup called noodle soup with pork, it has noodles, almonds and cilantro, and it was very tasty and a very good option for breakfast. They have a rice cake that they eat for the New Year. It has Vietnamese beans and pork inside, which is wrapped in a banana leaf.
On the way, when we wanted to go to the noodle factory, there was a cool local market where they sell all kinds of food, such as fish, pig's head, and all kinds of vegetables. We arrived at a noodle factory called Saw Hai, which makes different types of noodles. They told us that it contains 70% rice flour and 30% powder, and to give the noodles a red color, they use dragon fruit and it takes about 30 minutes to make. They spread the raw material of the noodles on a hot surface, then when it is ready, they are passed through a special machine to turn it into noodles.
There, they made a very delicious rice noodle pizza for us with fresh noodles. First, the noodles are fried in hot oil, then lettuce, coconut sauce, then another layer of fried noodles and then pork, eggs are added on it and peanuts, onions, nuts and coriander, which was very delicious.
