      I was married to a Vietnamese/Cajun woman for 10 years; Asians know how to cook eggs and eat a lot of them. The Koreans and Chinese are also experts at cooking eggs and with eggs.

    And I’ve always had two major problems with breakfast sandwiches which is the best meal of the day. First is it runny yolk which just makes an absolute mess of the situation and this is the solution. Second is sandwich structure. A fried egg on top of avocado makes for a slippery mess. Using a softer bread like a brioche bun definitely helps so you don’t squeeze out the ingredients. But with this egg structure so uniform and soft I bet it would alleviate that problem as well. Can’t wait to try it.

    I don’t know why, but I giggled at the sentence “step one is to blot the kimchi”! I think maybe it was a case of the “well, that’s certainly a sentence I wasn’t expecting to hear today 😀

    Looks really good! In Korea, we usually stir-fry kimchi with oil or butter for foods like sandwiches

      @@mjohansson100 it lowers kimchi's acidity and bring out savoriness! Stir-fried kimchi is often used in western fusion-style food

    I spent a little time in Beijing and had the same noodles in this little cafe about 5 times because they were so good! The menu was in Mandarin and so I didn't know the name of the dish. I kid you not, I have been watching recipes all over the internet for 6 years trying to find what it was I ate. THIS!!! THIS IS WHAT I ATE! I could cry with happiness!!!

    I just did this two weeks before this video came out. It was for bacon/sausage egg and cheese bagel sandwiches. The egg texture is great.

    1/4 tsp salt
    2/3 cup water
    300 deg oven for 35 minutes.

    wow this looks amazing. i wonder if you can quickly pan-fry the egg squares to get some color on them without messing them up, and how that would taste. i'm ready to try this. although 30-40mins is a good amount of time too

    This is such a great way to make breakfast sandwiches. I'm personally not a fan of runny yolks and the scrambled egg on fast food sandwiches is good but not great. Can't wait to try this.

      If you'd had listened more closely, Lan does say the pan was sprayed with veggie spray, then the eggs went in, and you can plainly see it was well sprayed.

    What brand of kimchi do you recommend? There are so many random brands these days, it's hard to know what's good. My "local" H Mart is over 1.5 hours from my house, so I'd love some local grocery recommendations

    What! Water! ... How about Silk (the drink that replaces milk and that is better for you!) instead. And as for the bread, again, you ought to have opted for a multi-grain wheat bread because the buns that you had chosen has very little nutritional value and it's mainly just fattening. ... Other than that, I like the cooking method of giving the eggs a water bath and I like the end result of being able to cut the cooked eggs like tofu.

    Whisk in some corn starch instead of dumping in so much water. It also prevents the egg from getting tough.

    I don’t know why, maybe it’s just me, but I think kimchi should just be by itself. Putting it on anything else just bastardized the dish and I’ve never had a crossover kimchi dish that I liked. Maybe I’ve had the wrong stuff or maybe I’m correct. Respect the chi.

      Because they ARE. it's been a staple of ATK from the beginning, as the test cook, Lan in this case, is showing Julia how this is accomplished.
