Portobello mushrooms are essentially the meat of the vegetable world. Once cooked, the texture is rich and cuts like a tender steak and the flavors also emanate that - especially when cooked in a beef broth. But therein lies the tricky task of making it taste like beef while keeping it vegetarian and/or vegan. That's where the miracle product of Better Than Bouillon No Beef Base comes in. Totally vegan and vegetarian, this product supplies the rich flavor of beef when, in fact, there is no beef present in the dish whatsoever. The end result is a Portobello Pot Roast that will becomes one of your new favorite hearty vegetarian/vegan dishes. To really get fancy, serve over my Cauliflower Purée or Aligot, if desired.

As a vegetarian (nearly vegan) I say thanks to you for a tasty alternative to meat. We are very grateful, Jeff. (There are vegan and vegetarian Worcestershire sauces for the comments saying it's not vege!).
Hiii your channel crossed my path during the non-essential covid times. I made your non-vegetarian pot roast and it was AMAZING. So with the extra time, I made it a mission to learn how to cook with my Instapot via your YT channel. The intimidation soon went away. As I get older, I want to cook 1 pot meals. Love your channel ❤ TY for sharing
I know this is supposed to be vegetarian but I’m just drooling over the mushroom gravy thinking how delicious that would be over steak or beef tips!! 😋
Looks great! Just a side note, I do not think worcestershire sauce is typically vegan or vegetarian unless you buy it specially but they do have it online
You're correct. Regular Worcestershire Sauce is made with anchovies. I'd suggest the same amount of Soy Sauce mixed 2 to 1 with Balsamic Vinegar as an alternative.
i found your channel thru the stuffed cabbage recipe you posted 7 years ago. time keeps moving. hope you and your mother are doing well
Thank you for this great recipe. There is a fungus among us!!
I’m making this for dinner tonight 😊
I'm from the UK. We just call it Worcester sauce
Awesome recipe Jeffrey! True, not strictly vegetarian because of the Worcestershire (pronounced “Woo-stah sheer 😉”) sauce but try some dark soy sauce instead.
Two more things:
I’m gonna try an immersion blender on the sauce and see how smooth it can be after thickening
If you’re gonna freeze leftovers, use a Wondra slurry instead of cornstarch. Wondra (which is pregelatinized flour) will keep the sauce thick when frozen and reheated, but cornstarch will degrade its thickening power after being frozen.
Check it out, and thanks again!
Sorry, Jeff; not vegetarian. Worcestershire Sauce is made with anchovies.
Um, butter isn't vegetarian, or vegan either. What's your point?
Also, there are vegetarian/vegan versions of worcestershire sauce, and butter.
What true vegan even wants a meat like flavor?
You can get it without anchovies.go to a kosher grit& read. Usually they have both.
@@danadyd59 My point? If you post a video recipe that you say is vegetarian, and then brag about it being vegetarian (both of which Jeff does in this video), it should be vegetarian. This sort of thing can damage someone's reputation and ruin their channel. I would rather that Jeff stays around.
Butter, by the way, while made with animal products, is considered lacto-ovo vegetarian (eggs and dairy are okay, but animal flesh is forbidden). The term "lacto-ovo vegetarian" was first used in 1952.
Thank you Jeff!
Definitely making this! I love mushrooms and asparagus!
This looks delicious! A nice piece of beef would make it perfect!!! (LOL)
Recipe looks good! I'd probably cook the asparagus separately, just because I like mine to still have a snap.
Im all about that meat but I will definitely be trying this recipe. Thanks for sharing
Hey! Haven’t seen you in a while I still think about you when I want roast beef au jus
According to PepperbellyPete, the proper pronunciation for W sauce is "Wash-your-sister" sauce. 😉
