Whole Food Plant-Based Cheesecake (Plain)

Ingredients:
Crust
1 cup pitted dates [soaked in hot water and drain the liquid after softening] (154 g)
1 cup rolled oats (100 g)
1⁄2 cup raw sunflower seeds or pumpkin seeds (78 g)
1 tsp vanilla powder
1 tsp Ceylon cinnamon
Filling
8-oz silken tofu (227 g)
1⁄2 cup raw cashews (or 1⁄2 cup of cooked white beans) (88 g)
1⁄2 cup date sugar (70 g)
1⁄2 cup unsweetened plant milk (4 oz)
2 Tbsp tapioca starch
1 Tbsp lemon juice
1 tsp vanilla powder
Directions:
1.) Using a food processor blend all the crust ingredients. Move crust mixture into a 9-inch springform pan. Press in the bottom crust layer using your hands to make a round compact layer.
2.) In a high-speed blender blend all the filling ingredients until smooth. Evenly add filling overtop the crust.
3.) You can freeze or bake this cheesecake.
4.) Freeze - add the pan to a freeze and let set for at least 4-5 hours until firm.
5.) Baking - Preheat the oven to 250 degrees and bake for 30 minutes.
6.) Let cool completely before removing cheesecakes from the springform pan.
7.) Serve with fresh fruit or homemade jam!

The cheesecake turned out perfectly dense and moist. I used canned white beans instead of cashews and subbed a couple more Tbs lemon juice for milk. I even added 1/2 tap lactic acid for extra “tang”. It was delicious! Thank you!

I too watched my father die a slow and painful death of 20 years on high cholesterol, diabetes medication. The doctors never told him to change his diet. He’s gone now, 2 years ago. If he ate WFPB and exercised, he would still be alive…his vitality ended in his 50’s as do so many Americans and they don’t correlate it to the food they consume, causing all the diseases….arthritis, auto immune, cancers, Alzheimer’s., heart disease…..😢

This looks so good so I thought I'd make it for a gathering next month. I wanted to test it first. For some reason, the filling didn't set at 250° for 30 mins. It was still runny. So I cooked it for another 15 mins and it still didn't set, but it wasn't as runny. I don't know where I went wrong because I followed the recipe and used all the ingredients listed. This is the first recipe of yours that I've done that went south. I'm sure it's user error😁
I’m not sure, mine has always set at 250 for 30 mins. I’ve had others make it the same temp/time and it’s worked
Could be the oven. My oven may need more time. I told that cheesecake it was going to set, so I just increased the temp to 350° for another 20 mins and it was perfectly set. And I made your jam recipe with blackberries and it was good. The cheesecake came out perfect. Thanks for sharing your recipes.
This is great! I was already making a cheesecake for my son’s birthday this Saturday and I think I will choose this one. I don’t have date sugar, but I do have date paste that I made. Would the measurement be the same if I use the paste? Or will that affect the consistency adversely?

Hello, ❤I discovered your channel, the cake looks great. What could I use for the base as a substitute for the dates, I only use yacon powder or syrup, but I don't want to use so much syrup so that the dough sticks.I keep thinking about how to make a different base, e.g. could I use bananas? Or chia or linseed? As I find it difficult to lose weight, I don't want to use nuts like cashews, as white beans are also fine. Thanks for help ❤❤❤

You could use either! I used the refrigerated silken tofu in this. As long as its silken you are set.

When you first went WFPB, did your stomach hurt from eating so many beans/fiber? I plan to go vegan in a few days and this has happened to me in the past when I have attempted to go vegan.

Yes, too much fiber in a short time can cause stomach cramps. We have been WFPB for 4 years and this still can happen to my husband occasionally. Drinking water helps make it go away.
I find canned beans can be a bit more problematic than beans rinsed and cooked from scratch. I do agree, however, that starting out with smaller quantities and working your way to larger quantities is your best bet. I haven't tried it, but I also heard recently that an Indian spice called hing (also known as asafoetida) can be added in a very small dose to the beans to help reduce stomach issues. It does add some umami but too much can ruin a recipe.

Dried plums or raisins would work!
In addition to plums and raisins, you may want to try some figs. You can mix multiple dried fruits together.
