    You are a WONDERFUL person! I'm making my mother's wedding cake and both she and her fiance hate fondant! I love this because I can get smooth base with just buttercream! You are just wonderful and I love you!!!! Thank you sooooo much!!!!!

    @77missjackson We have it on our web site in 3 lb. tubs or 50 lb. cubes. Restaurant/bakery suppliers also carry it in 50 lb. cubes.

    @Vix101100 It is OK to store fondant in the fridge as long as you let it come to room temp in the package before using it. That way the condensation forms on the bag or bucket and does not soften the fondant.

    Paper towel for colored royal icing and either method for white. For paper towel smoothing, you have to catch royal at just the right crusted stage. If it's too soft, it will stick to the paper towel, if it's too firm, it will get cracks when the paper towel is applied.

    @ zoenicole2000 Not frozen. You cannot use a frozen cake for the paper-towel method because the icing would get condensation on it and would not crust.

    It's similar to the BC frosting, but this icing gets more of a thin crust on it--which can be beneficial for decorating (not quite as fragile to the touch). If by pastry frosting, you mean a glaze like on cinnamon rolls, that does not have shortening in it.

    You can use any food-safe straight edge that is as long as the full height of the cake. I was using a offset spatula.

    It can be used as a filling by itself or can be mixed with fruit, pudding, jam, etc.

    It's just buttercream icing used as a filling or as a dam for fruit filling--see my video on "How To Fill A Cake."

    You should be able to use the water method to smooth the premade frosting--paper towel would not work since most premade frostings do not "crust." But since those icing are sticky, the sugar sheets should attach well.

    Swiss meringue buttercream does not crust so you could not use the paper towel method--but you could use the water method for smoothing.

    Thank you for such a wonderful demo, also for sharing your recipe for your award winning cake, I bake for fun for my family and friends and have tried several recipes for cakes from scratch but they alway come out dry no matter what method I use. I always default back to Duncan Hines which I doctor up and the cakes come out moist. Hopefully when I try your recipe it will come out moist.

    @yanni5473 Before fondant was commercially available, this is the type of icing used on 95% of cakes--many for summer events. If it's in direct sun/heat, it will melt, of course.

    Yes, you can use these same 2 techniques for royal icing, but you have less time to work with the icing before it starts to crust.

    This is the best tutorial I've seen from all the ones I saw! I liked your technique :) everytime I make a cake crumbs fly everywhere or I didn't put it on good

    The water spray method works with whipped cream frosting but not the paper towel method. The icing has to get a crust to use the paper towel method.

    Do you mean buttercream icing? If so, yes, you could frost the cake with buttercream icing and then use fondant to cut out thin black strips to attach to the icing for the stripes. Be sure to keep the fondant thin.

    thank you I work at cold stone and Im horrible at decorating cakes I've never used a scraper for the top like that but I always use it on the sides. well I have cake orders time to go practice

    Go to the web page on our site mentioned in the video and copy the cake recipe. Add the last 6 ingredients of the recipe to the mix (omit first 5 ingrendients)and it will be a firm cake.

    You could use the water method, but not the paper towel method because cream cheese frosting does not crust.

    You could use fondant icing. But this icing has vegetable fat instead of butter. Vegetable fat has a higher melting temperature than butter.

    If you can't get viva towels try a hardware store. It carries shop paper towels very similar to the by the Scott brand

    Yes, it does not crust like regular buttercream so you cannot smooth it using the paper-towel method.

    It’s the funniest thing because I didn’t see this video until after I used the water method for smoothing white buttercream also I find myself gravitating towards brown paper to smooth my cakes but I’ll definitely try the viva paper towel method too.

    If it's wrapped very well or sealed in a plastic bag, you can keep baked cake about 2 weeks in the freezer.

    You said that the paper towel method requires a crusted buttercream frosting?
    Is it possible to do that with a cream cheese frosting? (I want to try this method for a cream cheese frosting on a red velvet cake) if so, how do I make a crusted cream cheese frosting? or would the pastry scraper method/water work better?
