You cannot say that Prophet PBUH can not write. He can but there are many reasons why he can not write. He is superior to humankind so he writes and reads as well as you and me but there are several reasons he did not write in front of companions although he asked for the pen and paper that time when he was ill his PBUH’s companions ignored and did not give him the pen and paper. However, be a pure Muslim who could truly believe in the Prophet PBUH❤️
