The polystyrene molding - I'm surprised more people don't use it. Much cheaper than wood, and no one will ever know the difference after the project is complete.
Don't we love it when none of our questions are answered? They get paid for us watching, too. I feel like so many are doing too many shorts and not explaining products used or anything else for that matter. If you're going to have a youtube channel, at least list products used in the description box.

I've seen people do a smear technique to smooth them but it's a lot of work. You could leave them textured and still add trim but that is up to you. It's your house so do what makes you happy!

It's called base cap moulding. I got mine at Lowes

Thanks! I put it on the thickest part because I think it's easier. It's personal preference

I used MDF for the crown moulding, polystyrene for the chair rail, and pvc for the base cap "picture frame" moulding
