Absolutely the best Raspberry Jam I've ever tasted. The lemon juice adds a nice acidic kick to it. I also tried it with the scones. The scones didn't turn out too pretty but I'm sure with practice it'll be ok. They tasted good with he raspberry jam filling :) Thanks for these two recipes. :)
just finished making my jam, I just put strawberries instead of raspberries and it came out delicious, going for blueberry jam next, thank you for the recipe. NIght, night!
I've never used liquid pectin. I would read the instructions that come with the pectin, as you may have to make the jam a little differently. Actually the recipes and instructions that come with the pectin are usually pretty good.

I just made this- it turned out so good I decided to make some for holiday gifts ( just a day or so before giving it). I’m not sure if family members like raspberry-- please oh please would you do the same recipe with other frozen fruits and figure out the amounts for ingredients? Fruit is expensive and at this point I can’t afford to experiment to figure it out myself. Please? Regardless thank you. The lemon blueberry bread is divine as well. ✨
Pectin allows you to use less sugar by adding texture, but doesn't add much to the sweetness. Most jams pectin can be used because without it you add so much sugar.

I am VERY curious if this recope would work with cherries, strawberries and blueberries.....I Would love to use those berries. I added sugar, pectin, lemon (in powder), almond extract and vanilla sugar.. when I did the same recipe but instead of pectin I used cornstarch the mahaleb cherries were delicious.. Any thoughts?

You can just reduce the jam, let it cook a little longer until it's thicker. You don't really need pectin with raspberry jam, my mother has been making them since i was 8 from our garden.

Yes you could use brown sugar. The granulated white sugar I use is cane sugar.

This recipe is for a refrigerator jam so it does need to be refrigerated.

You can make it the same way she made this one....just play around with it. Everyone does it different. I do not use pectin with my jams.

+safctilidie you might want to stick with a store bought then. Have a look at the ingredients though which allow it to last that long.
