Braised Chicken in Beer Sauce with smoked ham and mushrooms

- A beautiful and tasty chicken dish, braised using beer. You can make this dish with your favourite beer, from blond or golden ale to stouts or any dark alse. The taste will be slightly different depending what beer you choose but all delicious.
I used smoked ham, but bacon works equally well. Try and buy the smaller white button mushrooms, if you can’t find them, simply dice them up.
Make sure you use the chicken thighs on the bone, makes all the difference keeping it juicy and more flavoursome.
Enjoy braised chicken in beer sauce today and make sure you taste the beer a few times just to be sure!

Hope everyone is following the technique? Seasoning, browning, sauteing the veggies, adding the braising liquid, stacking the chicken to dry and crisp the skin and finishing with a pan sauce. A proper procedure to make many meals easier to prepare, taste better, and less clean up. Thank you Chef for this one-pot meal as it we are hitting minus 20C this week in Toronto.

Wow, as a homebrewer for over 25 yrs. this is a recipe I'm going to have to prepare. Stopped brewing about 5 yrs. ago when I moved to Florida because of heat & space limitations, but still enjoy drinking a well balanced craft brew. Making your Chicken Florentine recipe this weekend for dinner with another couple along with your Ribollita soup as the first course. Would you recommend a splash of balsamic vinegar to brighten up the soup just before serving?

Joel my good Aussie friend, great recipe, being from rural Kentucky we we use a smoked ham, but it is dry cured & packed in salt in a homemade smokehouse where it is smoked in what we call hog butchering season which is early winter when the weather gets cold so it won't spoil, & then hung on a hook from the ceiling also & terra clothe rags that are soaked in water along with hickory wood also to smolder, do this every couple of days. Being irish we use Guiness beer for this recipe, cheers mate !

I do have one question - and if you’re getting any financial backing from AB InBev please feel free to answer me entirely dishonestly: Do you find that using an easy drinking macro lager in place of water actually noticeably improves the flavor of the sauce? If the honest answer is yes, then I don’t mind spending a couple of bucks on the beer, especially since Stella’s branding is so… well… stellar. However, if it doesn’t make a difference, I’m good with using some free tap water.
