    50 hr weeks and an ever growing popular youtube channel with all the editing that entails? You're doing more than most dude. Thanks for sharing and I love the music and tidbit info about sushi (like parasite checks and fresh water fish disease risks)

      He will never be the kamisama of cutting fish, that will always be Hari Kojima who I grew up watching on "Let's Go Fishing" on TV in Hawaii.

      But I like this guy far, far more than than "diaries of a sushi chef" guy wtf I cut fish better than him with my $2.69 Chinese knife... This channel is head and shoulders over the other catch and cook vids.

    taku: you should totally set up a PayPal link. I would totally donate a bit and I’m sure others would. You don’t seem like the person who would ask for money, but you are trying to get your RUclips career off the ground and you’ve done an incredible start.     Engawa is my favorite nigiri by far. It was escolar but after having hirame only, I became an engawa convert. Another very professional video Taku, I look forward to dining with you soon.

    Love the consistent uploads, but also know, we understand if you need some YOU time, and don't burn yourself out. I really like you specifically, partly because you are an actual sushi chef, your food creations are beautiful, and fun to watch.     I have very fresh frozen halibut in my freezer, thanks to my brother. I have lived my entire life in Alabama, and I have recently taken an interest in sushi/sashimi. Thank you for this video. I am an excellent cook, and sushi/sashimi is the next addition to my list of skills. Love from Alabama. War Eagle!!!!! Halibut is very, very easily overcooked, as is many fishes. As a youth, I never enjoyed fish, because my family always overcooked all fishes.

    Leave it whole (headed, scailed and gutted) cut it down the middle and partially fillet it from the middle to the fins leaving the skin by the fins attached then cut 2 inch wide ribbon sections from the middle to the fins and open it then put in butter cayenne pepper pumpin pie spice salt and what ever else you dig then close it and feel free to repeat on the outside then put parmesan cheese and breadcrumbs on top then put it on the bottom rack and broil it until it begins to smoke

    love the channel man keep up the good work. as far as fishing goes I would hook the bait in the lips it looks like you hooked it more into the head which it wont be alive for very long. also try hooking the bait 3/4 of the way back in the top of the back it keeps them alive longer and you tend to get better hook ups like that. just a thought

    You already do so much it's hard to imagine anyone would ask for more. Your videos are filmed really well and you put out amazing content.
