母亲节快到了,今天提前做了美美的芒果千层蛋糕,上面用芒果布置了一朵大玫瑰送给妈妈。采用简单的原味可丽饼为底,里面有蓬松轻盈的奶油糖霜, 每四层藏着香甜的芒果块和芒果泥。放冰箱隔夜吃口感最佳,可丽饼变得更软更入味。层层叠叠的白橙色,好阳光的颜色,好吃清爽。
Mother's Day is coming, today I made a beautiful Mango Crepe Cake in advance, with a big rose decorated on top using pure mangoes for my mother. This cake uses a simple original crepe recipe with a light fluffy whipped cream frosting, and loads of sweet mango cubes and mango puree are hidden in every four layers of crepes. Its texture is the best after being refrigerated overnight, crepes become softer and infused with flavors. Layers and layers of white-orange, vibrant color, delicious and refreshing.

I followed the recipe to exact and found: (1) the frosting couldn't firm up with the 3 ingredients, it was a disaster situation for me, I had to correct it by remaking the frosting added cream cheese in order not to waste the crepes I made and it was a success; (2) the crepes turned out pretty thick and can't get through with one fork without the cake falling to the side. I searched online for crepes recipe for this type of no bake layered cake, all of them called for half of the baking flour than this recipe calls. I will make it with less flour next time. Other than that, it was a thorough instruction. Thank you for sharing!
Try this method. Set pan on low heat. Pour some of the batter into pan then pour out the excess batter back into your batter bowl. Put the pan back into the heat until it starts to bubble. Flip the pan onto a rack or something to let it cool. You don't need to turn the crepe layer using this method and you will get really thin crepe layers.

I followed the recipe.But my crepes are not soft. I did fly the crepe thin, but after refrigerated, the crepes were not soft. Could it be I’m using cake flour? My whipping cream got softer and did not stay firm as I seen in the video. 😢

如果全程用低速打發鮮奶油要打好久哦,不知道達到什麼時候,我用完低速一般中速。還有,按你這個份量做,我的麵糊還剩快一半,而且我弄完沒有修邊,直接用了。

Hi Iwen..i made this crepe. Where can I upload the picture? Few questions here: 1. my crepe taste harder after i freeze it. Anything to improve
2. I dont hv dough cutter so my side sink therefore I can only put the mango closer to the middle especially when it get higher. Anything i can improve here?
3. I hv intention to upgrade my oven (i bake small item using 15 L oven & fryer). To make the variety you provide can you advise does convention oven or convection + convention oven is better ? As this 2 oven is very different in price.
