Just leave it in there. It shouldn't stop you from finishing. By the time you stretch it out he will only have a wrist and hand in there. But he will probably pull it out anyways. It's a natural reaction to untrap your arm.
At 2:44 it looks like his opponent could stack him and potentially this could hurt his neck. Awesome technique and breakdown. I'm fairly new. Am I wrong about the stacking risk?
It really depends...If u hold leg tight and also push your hips away it will be hard to keep the balance thus stand up and stack him. If on the other hand u slacking and do it in lazy way he might actually stack you.

Catch wrestling is cool, I plan to learn it myself someday to supplement the other grappling styles I practice, but if they were “better” in any way than bjj they would be more relevant I think.
