My mom cooked from scratch for a family of 7 for so many years, she couldn’t adjust when the nest was empty. She always lured me over on a weeknight with the promise of her delicious food! She also gladly took food for church carry in gatherings and when a family member was ill, mom made sure their family had something to eat. Home made chicken noodle soup was brought to our doors whenever we were under the weather. Watching you cook is a lot like her, no need to measure it’s become second nature. Tried and tested. Glad you and I got/get to enjoy our sweet boys as a stay at home and homeschooling momma.❤ Those years were wonderful but went by way too fast. I found you and Sue about the same time. I made everything for my family but I had been gluten free for 10 years. It was hard smelling all the goodness without partaking. After hearing testimonials from Sue about people with gluten intolerance being able to handle the home milled flour I finally got brave enough to give it a try. That was about a year ago. I did a bite one day. Two bites the next day. By the end of the week I ate an entire loaf of bread. I had some catching up to do after 10 years of gluten free! I’m thankful that both of yall have provided so much good content so that I can feed my family better options without feeling too deprived.

I often sift out some (with a relatively coarse sifter) or almost all (with a relatively much finer sifter) of the bran from my fresh-milled flour to get a finer texture. Great activity for children to help with in the kitchen! It’s the kind of flat, round sifter (it’s probably got a specific name but I don’t know it) that looks like you’re panning for gold!

Lisa my book came today and i was over the moon happy. Its 11pm here now and i could not go sleep without going through it. You are my inspiration because of you i started doing sourdough everything flour related. I can never go back anymore. I slowly bought all the things and its always so exciting to pull that baking out of the oven. I would love to know what the brand of your grain mill. I used to mill all my flour when my 6 kids were little and I was homeschooling them. My mill sounded like a jet. I used to have 50 pound bags of white whole wheat kernels and I used vital wheat gluten and another additive that I cannot recall. I just recently found your RUclips channel and find it very relaxing. It is also bittersweet to watch. My oldest turned 36 last Saturday and my baby turned 27 in September, he has a son 4 months old. I was so thrilled when he came over and told me how he sings to him and dances and how he reads to him. He was very pleased to tell me how much breast milk they had in the freezer. He moved to Texas and is loving with my 34 year old daughter who homestead. When I texted the other day she told me how much she loves canning and is very excited to start her garden again in March

I love your cookbook, Lisa! It’s so nice to open a book rather than search online. And I do use it almost daily! Today I’m making your flatbread recipe (half whole grain and adding a Tablespoon of sugar) for making wiener wraps. We did this easy protein rich meal last week and my kids loved it.
I love window opens days. Unfortunately it’s hard. We live on a gravel road with strong winds much of the time. When it’s dry especially those dusty clouds come right in. 😢. Not only does it cover everything but isn’t the best for all of us in the family that have asthma.
I love Sue Becker! She makes it easy to understand the health benefits and it is amazing to use FMF. It also motivates me use FMF in everything. I feel better when I stay away from all-purpose store-bought flour. You are my inspiration for cooking from scratch and I am thrilled to see videos where you use full FMF. That is funny because I have been making all of your recipes with whole grains only and they all have turned out. For health reasons I only use whole grains therefore I have no other options because I don't buy any other options. And everything has worked great!

I was raised on fresh-milled whole grain, but have been following your sourdough recipe with 500g all-purpose, 250g bread flour, and 200g fresh-milled. My family loves it. 😂 I have never been able to keep a starter alive with fresh-milled flour. 🤔
You might want to consider milling just outside your back door there. Fine particle and fire is a very bad combination. If you get a bit too much of that flour airborne your whole kitchen will go up in a fireball
You are an absolutely beautiful person inside and out. Your videos are beautiful too. I caught myself getting into that old comparison thought process and wishing I had a beautiful country home like yours, or to be able to do all you do in the kitchen out of intuition, but I think the Lord reminded me before I could get too deep into that thought process that I am not where you are. We are all on our own journey in this life, and while I may see plenty of things I would like to be able to do for my family that would greatly benefit them in many different facets, I can only do what I can right now one step at a time. I am an all or nothing kind of person and tend to give up in discouragement when I can't see a way through what I'm facing. But I realized just now that I can take what I've seen and implement one thing at a time, and in time, I will get to that point as well. I realize you didn't know how to do all you do at once, you had to develop that wisdom throughout time and practice; that's exactly what I need to do. So thank you for being the sweet and peaceable person you are , and for giving such great inspiration for a peaceful home! :)

Today I made chicken and rice using my from scratch bone broth; it was delicious. Last night I took a loaf of sourdough pumpkin bread with cream cheese icing to a Halloween party, it was a big hit! I’m so thankful I’ve found your videos!
We do not have a line item budget....we purchase a half cow every six months and chickens/a hog a year. Then in summer go to the farmers market and a couple times a year get an Azure Standard order to stock up on pantry staples
I love the idea of using a mill, but it's such an investment, especially for one person. So many people have asked me to make sourdough bread for them and they would pay, but still. Seeing you and a few others entice me for sure.
Maybe u know someone with a mill who would exchange grinding u 5# of grain for a loaf of bread? U can freeze it to keep it from going rancid like the store flours.

Nigella Lawson taught me to keep fortified wines, vermouth, sherry, and Marsala on hand for deglazing. All are cheap and don’t go bad! Vermouth is my go to for chicken dishes!
I will check out that podcast. I usually use half AP flour and half freshly milled grain. I make all our bread products. I bought a couple of books on using home milled flour. There are definitely differences. The rule of thumb is add an extra 1/4 C of water per cup of freshly milled flour as it absorbs water at a greater volume.
I am so scared to try freshly milled flour haha. But you always make sourdough look so easy and this video definitely gave me confidence to explore freshly milled flour more.

That is funny because I have been making all of your recipes with whole grains only and they all have turned out. For health reasons I only use whole grains therefore I have no other options because I don't buy any other options. And everything has worked great!

I was raised on fresh-milled whole grain, but have been following your sourdough recipe with 500g all-purpose, 250g bread flour, and 200g fresh-milled. My family loves it. 😂 I have never been able to keep a starter alive with fresh-milled flour. 🤔
Yes I heard that often...fresh milled definitely has a learning curve much like learning sourdough.

You might want to consider milling just outside your back door there.
Fine particle and fire is a very bad combination. If you get a bit too much of that flour airborne your whole kitchen will go up in a fireball

You are an absolutely beautiful person inside and out. Your videos are beautiful too. I caught myself getting into that old comparison thought process and wishing I had a beautiful country home like yours, or to be able to do all you do in the kitchen out of intuition, but I think the Lord reminded me before I could get too deep into that thought process that I am not where you are. We are all on our own journey in this life, and while I may see plenty of things I would like to be able to do for my family that would greatly benefit them in many different facets, I can only do what I can right now one step at a time. I am an all or nothing kind of person and tend to give up in discouragement when I can't see a way through what I'm facing. But I realized just now that I can take what I've seen and implement one thing at a time, and in time, I will get to that point as well. I realize you didn't know how to do all you do at once, you had to develop that wisdom throughout time and practice; that's exactly what I need to do. So thank you for being the sweet and peaceable person you are , and for giving such great inspiration for a peaceful home! :)

Just wanted to say that I love the book! I’m currently in the process of making the jalapeño cheddar bagels. I’ve been making your bagels for a long time now and they are definitely a family favorite! This will be our first time trying this version though. They sound amazing!
Today I made chicken and rice using my from scratch bone broth; it was delicious. Last night I took a loaf of sourdough pumpkin bread with cream cheese icing to a Halloween party, it was a big hit! I’m so thankful I’ve found your videos!

We do not have a line item budget....we purchase a half cow every six months and chickens/a hog a year. Then in summer go to the farmers market and a couple times a year get an Azure Standard order to stock up on pantry staples

I love the idea of using a mill, but it's such an investment, especially for one person. So many people have asked me to make sourdough bread for them and they would pay, but still. Seeing you and a few others entice me for sure.
Maybe u know someone with a mill who would exchange grinding u 5# of grain for a loaf of bread? U can freeze it to keep it from going rancid like the store flours.

Nigella Lawson taught me to keep fortified wines, vermouth, sherry, and Marsala on hand for deglazing. All are cheap and don’t go bad! Vermouth is my go to for chicken dishes!
Water & a splash of vinegar work great. I dislike wine so I’ve been using that.
We add a pinch of mace to our pumpkin pies 🥧 😋

I will check out that podcast. I usually use half AP flour and half freshly milled grain. I make all our bread products. I bought a couple of books on using home milled flour. There are definitely differences. The rule of thumb is add an extra 1/4 C of water per cup of freshly milled flour as it absorbs water at a greater volume.
