Many years ago, I made green tomato pickles like we did our dills. I took a quart jar to church for my brother and sister in law. I told them to give them about a week for the flavor to permeate the tomatoes. Later on I asked if they liked them and was told they were gone before they got home from church!

I think these would be good, but I would also add a clove of garlic and a teaspoon of salt to each jar. But I bet these would be good with peas and cornbread! Enjoy, Matt!! I love watching you two in the kitchen together!

My family has always done it this way. We mix peppers and tomatoes and also have jars with just hot peppers. We call it pepper sauce, have made it all my life, just like my Mother. It is so good with vegetables and especially on turnip greens. I'm a rebel too. Makes great gifts also.

Hi Matt and Tipper! those jars looked beautiful! one of my favorite things to make is the way my Grandma made piccalili. she used only sliced green tomatoes, sliced onions and cut up cabbage, salt down and let sit for awhile, drain and then add the hot brine. we never canned it, she just kept it in a small crock in the downstairs fridge and we'd just get some and snack on it whenever! i put mine in a half gallon jar in my fridge. love watching you all (we say "yinz") cook and garden! never miss a video! Those are some pretty jars of tomato and pepper pickles. I can’t eat real, real, hot stuff, either. A little kick is ok. But, I can’t taste the food if it’s too hot. Fun to watch y’all can together! ♥️🙏🏼♥️
Thanks for the video. My mom made those but she put some colliflower, carrots, garlic and sometimes some green pepper. Tomatoes are the main thing, not to much of the other items. I have tried to make them in a water bath with a "safer recipe" and it's not the same, they loose a lot of crunch. I was trying to remember the term rebel canning yesterday. Mom would add salt into the brine till an egg would float. After filling the jars she would set the jars upside down for a couple hours then flip them. My favorite meal to have them with was pinto soup beans also. Sometimes had them with just some cheese and crackers.

I used my dishwasher when I canned. 😊 I would turn them upside down on a towel and cover them with a towel. Then before I went to bed I would turn them right side up. They would usually pop. The ones that didn’t I put in a fridge.
Thanks for your repeated reminder about safe canning. I have used the method shown for fruit jams and preserves. In the 1970s when I lived in Springfield MO the TV news and newspaper reported the death of a woman from her pickled beets, and her DIL was hospitalized after taking only one or two bites. Botulism was the cause. Since then, I have erred on the side of caution--either a hot-water bath or refrigeration and quick consumption. I have been tempted to make pickled okree using the method shown--veeery hot jars and spiced vinegar.
I know it’s hard work, but you all are so blessed to have good food you have raised yourselves. I’m sure those pickles would be good with soup beans.

For a sweet treat Grandma always used to mix brown sugar and cinnamon in a bowl dip both sides of the apples and then throw them on the dehydrator. I still remember her making all kinds of fruit leather too. It seemed like once fall came around that dehydrator worked overtime. Anyway those pickles look really good.
I love hot pickles and never thought to make them with green tomatoes. I probably love that too.

Wow Matt. I have been canning green tomatoes for years. This is a traditional pickle in Eastern Europe. I am of Croatian descent. After we have finished our harvest of ripened tomatoes we pickle the green ones so they don't go to waste. The only thing I do different is add garlic & peppercorns to each jar. But the rest is all the same with the open kettle method. Good luck with yours!

Hey Matt and tipper one of my uncles in Alabama used to make hot pepper tomato juice. We sipped it while deer hunting with dogs in Alabama and Georgia but we chased it with a slug of moonshine. If the hot tomato juice didn't warm you up the moonshine sure did.

Really enjoy seeing recipes like this, especially with it being down to odds and ends in the garden. As someone who doesn't care for fried green tomatoes, I tried a pickled green tomato a neighbor had made and loved it! Thank you, Matt!

I cut green tomato into rings and cut onion into rings and sometimes cauliflower and hot peppers and do a sweet pickle brine, it stays crunchy and sooooo good

Growing up, none of my family ate chili peppers, fresh or dried and ground, in any of our foods. All we used was ground black pepper from the store. Since I've been on my own, at least for the last 40 years, I have used fresh ground black pepper from pepper corns. I don't even keep ground pepper in the house. I have developed a taste for a mild amount of chili peppers in some dishes.
I made those hot pickled tomatoes with my granny decades ago, we enjoyed them with pinto beans and corn bread too. As a special treat my granny would make corn bread with corn and thinly sliced jalapeño peppers baked in it-so good. 🙏☮🌼

I use the open kettle method too; on a lot things. My Daddy started making this when he was young. I wouldn't be surprised at all,if he had ran into Papaw Tony on his many trips to your area and that's how he heard about it ❤❤. He never met a stranger lol!!

You should make one jar with Anaheim chilly with the seeds taken out and see if you like them. My husband made them with the green tomatoes,peppers and carrots.

Dehydrated apples are so good and good for you. I saw someone having some banana apples today but I've never heard of them before. I'll have to see if they have them at the store and try them. You have mentioned setting up drip irrigation a couple times in order to have an easier time in dry years and I’d really recommend it. It’s not so difficult to do- I did it myself with no prior experience- I’m sure Matt could set it up. I got my stuff through Drip Depot but there are a handful of stores to choose from. It can really turn around poor bean, pea, and potato growth in dry years. I also use a spinning overhead sprinkler when it has been super dry for a long time. It’s not the same as rain of course, but the plants respond a little better I think.

I've been canning like that since 1975 , never had a bad jar. Got to be scrupulously clean, hars in boiling water and also the rings and seals , never failed me. Those pickles sure look good ,in NZ here were heading into Spring , so our busy time is ahead, I will try those when the tomatos are ready ❤❤❤❤❤❤❤❤❤

My Dad made these and, like Matt, was the only one who could or would eat them so he put them up in pints AND added a little salt. He would dare the kids to take a bite and offer a dollar to the brave ones. Needless to say, he never had to hand over a dime!

Hi Tipper, love watching all your videos!! I may have missed it but have you ever done Dilly beans? Green beans, garlic, dill weed and cayenne (if ya like a kick like I do)? They are so delicious. Canning them was a treat with my southern grandma. Thats why I love your channel, makes me think of her cooking and especially her phrases when she spoke. Tipper I have seen this done with carrots cut in rounds and whole jalapenos, and onion. Really good. I want to try this... I might not cut up the jalapeno so it won't be so hot. Sure makes a pretty jar. Good job yall!!

Hey y'all! I enjoy watching your videos.. reminds me so much of some of my kin folks and country living!! Maybe y'all could grow some different types of peppers?? I think maybe on your upper bank where y'all put those planters that Matt built where the sun shines more?? Plus Matt have you ever put red pepper flakes in your stuff when canning?? I enjoy using red pepper flakes in many things especially pasta sauce!! My grandpa used to grow his own hot peppers and made his own hot sauce and pepper and sauce.. it's a great memory I cherish to this day..

I might just try this. I have tomatoes and I have lots of cayenne peppers still on the vine. I love spicy foods and I love tomatoes, so this will work perfect for me. I am the only one at my house that will eat anything hot or even tomatoes and I am always looking for new recipes to try and preserve. Thanks for sharing.

Never eaten hot tomato pickle, but I’m like Matt - I love just about anything with a kick. If it’s hot enough to make me sweat, then it almost hot enough. 😅
I’ve never canned hot tomato pickles. Going to give this a try with the last of our tomatoes. We use the open kettle method for some things too. We preserve food like our grannies always did it.

I make pickled green tomatoes too; only I have to take out the seeds(way too hot with them) and use some banana peppers with my Anaheim and jalapeños. Ya'lls look much prettier ❤.

Hot tomato pickles sounds delicious! We tried canning green tomatoes last year to make fried green tomatoes with but they turned out mushy and unuseable so can't wait to try and make these! Thanks Tipper & Matt!!
Daddy and Mama would always make a big batch of Pickled Hot Tomaters! She'd make a big pot of Pinto Beans, Butter Beans or whatever kind she wanted to cook up! She'd even cook up a big pot of Greens and of course, Cornbread! We had Cornbread and Homemade Biscuits with every meal. They put the small green peppers and the Cayenne Peppers in them! Some were hotter than others! The Jars that wouldn't so hot, us kid's would even eat them. I love to eat them with about any Supper bc we always have some type of Beans or Pea's! I hope yours turns out good and hot for you Matt! They shore nuff look good! They're best if they sit in the Jars for a good lil bit. I can taste them now with some Pintos and Cornbread! We hadva short season a few years back and I made relist and salsa from the green tomatoes and it was good.

Dad made the same, but he didn’t use the oven, do not recall how he did them. What i do know is they were so dad gum hot when you opened the jar your eyes automatically teared up

For a few years, I made green tomato relish, like is served at catfish restaurants. Sweet, but you could make it hot or not.
