BROWN BUTTER CHOCOLATE CHIP COOKIES | How to make the Perfect Chocolate Chip Cookie

Browned butter + crispy edges + soft and chewy in the middle = PERFECTION
Plus, you don’t need to chill the cookie dough before baking. So if you crave for some chocolate chip cookies, you don’t have to wait for hours.
Trust me, these cookies are seriously amazing.
INGREDIENTS:
1 1/4 (156 g)cup all purpose flour
1/2 tsp. (3 g)salt
1/2 tsp. (2 g)baking soda
1/2 cup ( 112 g/4 oz.)unsalted butter, browned and cooled
1/2 (110 g) cup brown sugar
1/4 (55 g) cup white sugar
1 egg
1 tsp. (4.2 g) vanilla extract
1/2 cup (80 g/4 oz.) semisweet chocolate chunks/ chips
* feel free to add more chocolate chips if you like
Yield: 8 (4 oz. ) cookies
TIPS:
1. Make sure to transfer the butter immediately to a bowl after browning to stop the cooking process.
2. Cool the browned butter before adding the sugars. If the butter is not cooled, your cookies will become greasy.
3. Do not overmix the cookie dough.
4. Baking times may vary depending on the size.
I used a 1/4 cup cookie scoop in the video, baked them for exactly 12 minutes.
Smaller cookies means less baking time.
DO NOT OVERBAKE.
5. Cool completely in a cooling rack.

These were awesome! A simple but delicious recipe. I made them a smaller and added a bit more chocolate (about 50% more) plus some flaky sea salt on top, baked them for 10 minutes- they were perfect.
Awesome recipe. I made a couple of small tweaks second time I made them which I recommend giving a try. I completely cooled the browned butter so that I was able to whip it together with the sugar, rather that just dissolve the sugar in the melted butter.
I also chilled the dough in the fridge overnight. I know you said its not needed for this, and I agree - they are still great. But having said that I think letting it rest lets the flavours develop and the flour get more saturated - helps for a tastier more textured cookie. I think even chilling a couple of hours would help, might not need as long as I did. For me its worth the wait.
This recipe works well. I chill my dough to get less spread and add a few things to make it my own. But this recipe is a wonderful solid recipe.

@@ameeradil By adding water back to the butter after it has been lost due to evaporation whilst browning the butter, it will result in a less greasier dough with better texture. So I suggest you do :)

Heya, have you tried what binging with babish's recipe does? - he browns the butter, then solidifies it in the fridge afterwards before creaming it with the sugar, as you would with standard butter. Stops the spread and helps with the texture - really the best of both worlds IMO! Get the roasty nutty flavour but not the oily flatter cookie texture

I tried this recipe but I’m not a fan of how the browning of the butter tastes so I just skip that step. Delicious every time and I can’t wait to make different versions! 🥰

Yes you can use salted butter, just omit the salt.

Hi, 112 grams of cold butter. After browning the butter, you can add a little bit of water or ice cube to make up for the missing quantity.
I have a question did anyone add any liquid back into the butter in order to account for the moisture loss?
Hi, with this recipe I did not have to add any liquid back. I know it will have lesser quantity after browning the butter but it still worked well.

hello, yes you can. It will yield a more chunky cookie if you like that.
Should there be no sugar granules before adding the dry ingredients?
Hi, the sugars will just mix with the brown butter. It will not fully dissolve. Just mix it until combined. Add the eggs until smooth then followed by the dry ingredients. Do not overmix after adding the dry ingts.

yes, there is no need to chill the cookie dough. However, you can chill it if you really want a chunky cookie.

Did the recipe it was good. I actually doubled the recipe I yielded 18 50 gram cookies. I did use half cake and half all purpose flour. And I did reduce the sugar
But it was nice. Question, when browning the butter how long should i keep it in the gas and should the fire be in high or just medium?
@@therevlimitph Great! When you see the milk solids in the bottom and the color is slightly turning brown. I browned the butter over medium heat so I don’t burn the butter.

Hi, sorry to hear that. It shouldn’t be flat. I just want to ask if you’ve preheated your oven at the right temperature before putting the cookie dough in? That’s is the only thing I can think of. Also, one factor can be is you measured your ingredients incorrectly. Hope that helps. 😊
@@YSGKitcheneria thanks for your reply. I'm sure i measured my ingredients correctly and i did preheat my oven beforehand. I noticed that after i added in my egg and vanila extract, it is quite watery and not the same texture as yours. Do i need to wait for the butter to cool down completely?
@@Kerisu_haven yes, you need to let the brown butter cool down (5-10 minutes). Otherwise, your cookies will be greasy. Other than that, if you’ve measured your ingts correctly and preheated your oven, everything should be fine. *Please see the description box for more cookie tips.

Hi, yes you can still chill the cookie dough. The cookie will be chunkier and taller.

Hi, sorry to hear that. It should spread a little bit. One reason can be inaccurate measurement of ingredients. I was thinking maybe there was an error when measuring your dry ingredients especially the flour. Do not scoop the flour from the container using the measuring cup, try to use another spoon and then fill the measuring cup. Maybe you used a smaller sized egg. Also do not over mix the cookie dough. Preheat your oven 15 minutes before putting your cookies in. I hope that helps. Let me know if you have questions. I’m here to help. 😊

I followed your recipe but my dough turns out not hard like yours. Its like lil bti greasy, i cooled down the butter before 🥺 why? And now i chilled the dough for 24 hours
So sorry to hear that. I will advise to measure the dry ingredients properly. Also you might have used smaller eggs than what I used. I used large eggs. @@nindirashadrinaghassani1986 Hi, this recipe does not need any chilling. However, since you already chilled the cookie dough, you can let the dough sit at room temperature/ counter top for 5-10 minutes so you get the perfect texture once baked.

The only thing a restaurant would change is to strain that brown butter through any kind of cloth, just to get rid of those brown particles.. But overall GREAT recipe!
Hi, the brown particles are the milk solids that you don’t want to waste. It is good especially when making cookies. In the restaurant, you can remove them if you want to make clarified butter.

@@zeneezon3442 It can be one factor. You don’t need to chill the cookie dough for this recipe. If you really want to chill the cookie dough, you can leave it at room temperature for a few minutes before baking them so it will not be as hard. Hope that helps. 😊

Just made this recipe. While the texture was nice, the taste was a bit bland. I expected the flavor of the brown butter to come through more.
Well it’s very dependent on the ingredients you use, you want a good chocolate and butter. Because the better the quality, the more enjoyable it will taste!

Hi, I haven’t tried to make this recipe using an egg substitute. But there are a lot of egg substitutes, you can use mashed bananas, chia seeds, flax seeds, apple sauce and many more.
