How to Cook Spicy Tokwat Baboy (Fried Tofu with Boiled Pork Recipe)

- This cooking video will show you How to Cook Spicy Tokwa't Baboy. It is a Filipino dish composed of boiled pig ears and fried extra firm tofu. These ingredients are sliced into bite-sized pieces and soaked in a spicy vinegar mixture, which is composed of white vinegar, soy sauce, chili peppers, sugar, and salt. This dish can be eaten as a main dish with white rice on the side. It can also be paired with a cold bottle of beer as a pulutan dish.
Note that this episode was shot in the Philippines during our vacation. It was really great to see everyone and sample all the food specialties of the places that we've been to. I am looking forward forward to my next trip sa Pilipinas.
Here are the ingredients for this recipe:
1 ½ lb. pig ears
3 slices (12 ounces) extra firm tofu
10 to 12 pieces Thai chili pepper, chopped
5 pieces long green pepper (siling pansigang) sliced
1 medium red onion, sliced
½ cup chopped onion leeks
2 bunches lemongrass (dahon ng tanglad)
½ oz. Cinnamon bark (optional)
1½ cup white vinegar
½ cup soy sauce
2 tablespoons granulated white sugar
1 ½ to 2 teaspoons salt
¼ teaspoon ground black pepper
12 to 15 cups water
3 cups cooking oil

U can also use smashed ginger and shredded ,green sibuyas with the first boiling para maalis ang amoy lansa . I discovered this secret technique and since then use it on all dishes that involves any kind of meat . On fish , shrimp and squid , I rub both on the fresh seafood , leave them in the bowl, set aside for 15 minutes occasionally shaking it around . Rinse then proceed with the recipe . Works everytime . High end restaurants do this as they can offset the extra cost of this extra step and time ( and ginger + scallions ) by charging more. I'm really appreciative of your skill in cooking traditional pinoy dishes using modern techniques + spices . I was dismayed by an article in CNN describing Filipino food as bland and boring , vegetables overcooked and unrecognizable. I can somewhat agree . But American cuisine is just as bland and boring for lack of variety and use of spices . American palates are very , very slow to adapt to foreign flavors and ingredients , unlike the Europeans who readily embrace the exotic .Our cuisine has not evolved despite media saturation and exposure. Pinoys hate spices like cumin , star anise , coriander , cardamom, galangal, turmeric , curries etc. Countries who use spices in their cuisine have way low statistics of dementia, high blood pressure, diabetes etc . So I'm cheering you on . Since you have quite a following , your videos exposes your fans to new interpretations and modern culinary techniques . By the way , pinoys use cinnamon ony on sweets , not savoury dishes which is a pity because cinnamon and other spices have medicinal properties. I'm also your fan.
