I made a batch a few hours ago. I used my Kitchen Aid and needed to add 3 or 4 Tablespoons of water. All the kneading was in the machine, about 10 minutes. I baked at 375 F for 25 minutes right on a cookie pan, no paper. I squirted a little water in the preheated oven before baking. I formed 4 rolls about 8-1/2 " long, the same size I make my sausages. Wow, they are great! They're soft and chewy with just a touch of crust. I'm not sure I've had a better hoagy roll, and for sure it's the best I've made. They look a bit dense, but the mouth feel is right. The real test will be a Philly cheese-steak all sloppy with grease. Congratulations on a top notch recipe. Just opened my last 5 lb bag of bread flour; might need to don a mask for other than health reasons.
Have made these several times now! Just fantastic! I saved the video and constantly sharing with anyone who asks how come my homemade hoagies are better than the store bought ones! Thanks for a wonderful recipe!
I made these for the first time last week and they came out yummy. My turkey and cheese Hoagie was delish, I made homemade hoagies. it's the coolest thing ever. Thanks for sharing.
Just made these rolls. I added 3 ounces of my sourdough discard and they were very delicious. I used them for teriyaki chicken cheesesteak sandwiches and the rolls held up great with all the sauce and toppings. Thanks for sharing! 😊
BEAUTIFUL and easy dough to work with. Guess it must have been humid here today because I only needed 1/2 cup water to achieve the right consistency. Rolled out like a dream and am excited to use these for Philly Cheese Steaks later.
Made these last night but I used regular sugar and also added 5 grams of amylase enzyme also after the first rise I put the dough in the fridge for 2 days. So good light fluffy and soft. Will use this recipe from now on
Those are beautiful... late to the game on the Grinder.... making these, now with this recipe, next weekend when some friends are coming over for games.....
I'm excited about this recipe; can you tell. I just made another batch. I got to thinking that maybe my way of measuring water, (a measuring cup), might not be very accurate. Using my scale 236 G of water went way over the 1 Cup mark on the measure! So, I made the recipe by weight for the flour and water. Again all the mixing and kneading were done in the KA. 10 minutes after all came together on #3 speed. The dough was wetter than yesterday but manageable. I made 4 balls close to 7.55 OZ each. I formed the rolls on granite, no flour, no oil. Worked fine. I preheated to 425F with a pan of water on the lower shelf. I baked at that temp for 10 minutes then lowered to 400 F for another 15 minutes. Everyone has their own idea of the perfect hoagy roll/ cheese steak roll/ panini roll, I'm sure. For me, what I got today is superb! The rolls are a just a bit crustier, just a bit. The center just a tiny bit more open and just as chewy. And when cut they form a good hinge. Many, many thanks C.P.
Great instructions and super video. I followed these steps exactly. 350F convection/fan baked until internal temp 208F. Let cool, kept in a bag overnight. Hoagies the next day were delicious!
I just finished making your recipe ! OMGoodness ! The Best Recipe I have ever tried. The only difference was mine needed 1 cup water instead of 3/4 water and that’s because I live in a very dry climate ! Other than that , it’s the best ! Thank You 🙏🏼
Just made this recipe today, exactly as it is written, and I am THRILLED that they turned out PERFECT!! The recipe is so very easy, the dough is a dream to work with, and the results are far better than any other recipe I have tried. Thank You Cooking Passion!
looks good. I think I would leave out the egg wash and allow them to rise 15 minutes more before baking. a Razor blade is good for scoring .. thanks for the video
You can also spray a decent amount of water on them right before they go in, get them good and moist and add any toppings you want (poppy, sesame, carroway, etc) and pop them in a very hot oven while still very moist. If you want them VERY brown without getting burnt, pour some boiling hot water in a tall sided pan underneath the primary bread pan and allow it to moisten the whole oven while cooking.
Positively, the best hoagie recipe! I bake for myself, so I scale down for 1, 2 or 3 rolls. I also use a blender to mix and knead (less time and clean-up).
These are awesome! I am a new bread baker, so always look for “easy” recipes. I made some meatballs and wanted a sub, so decided to make these. Of course, I had to do a taste test before using it for a sub, so I put a little butter on and so delicious. Will definitely be making these again! Will likely do various sizes and shapes for future batches. Thanks for this!
I'm waiting for these to cool down and they smell delicious! Only 1 out of the 7 I made came out well enough for a good sandwich (the other ones are a bit skinny). I probably should have let them rise a bit more or made less rolls, but for a first attempt they came out alright :) I think I'll use the skinnier ones as hot dog buns. I baked them at 356F for 20 mins. Thanks for sharing this recipe; I've been baking a lot during this pandemic and it helps distract me from everything going on in the world.
These rolls look good, similar to what I make. Home bread baker here, glad I had been stocked up on flour and yeast before the Coronavirus craziness started. Great Music!
I plan on making subs for dinner this week. I was also gonna buy some hoagie rolls but after seeing this video, I think I'm brave enough to make em homemade I don't have bread flour nor am I gonna pay an arm and a leg for it. So what I'm gonna do is mix some wheat gluten flour with all purpose flour. And pray these rolls come out just like yours. Tfs
Personally I love giant hoagies so I would probably divide this into 1/3 instead of 1/6 and get me some nice giant hoagies. Though admittedly that makes rolling in the correct proportions a bit tougher.
this is now my go to recipe for buns, made them last night for some Philly cheese steak sandwiches, they were great, topped them with some cheese and oregano and they were the star of the show!!!! Thanks mate
Alright, so I just made this recipe. They are cooling now. Initially, awesome recipe!!! They are quite small tho, so keep that in mind if you are doing this. I would recommend making only 3-4 subs with this amount in the recipe. Maybe I did something wrong throughout the recipe? But they look freaking awesome and smell so good!!!
thumbs up for knowing what a hoagie roll is... but did you know that name comes from a small island below Philladelphia PA called Hog Island... it was the birthplace of the Hoagie.. and they were sold to Submarine Workers at the Philly Navy Ship Yard and when brought to other cities they were called Subs. .. its true
Thank you for showing us this recipe. We are practicing different technqiues and are going to start saving money (eventually) to quit going to Subway & Jersey Mike's. It's just too much.
It’s July, and I am in Texas, so I’m not sure if that had an affect, but I found that the dough was way too dry to be kneaded by hand so I slowly ended up adding around 3/4 of a cup of whole milk because I heard somewhere that… the more fat you can get into the dough/bread, the better because it means it’ll be more moist, and then I used the BERTINET method of kneading the dough because it was so sloshy/sticky, and it took about 20 minutes to finally get it, smooth and not sticking to my fingers anymore which I know means it’s ready. 🥺 Hope it will come out great, I also saw another recipe, saying to add an egg into the dough but I don’t know if that’s a good idea just yet. Another basic principle I heard from another video from a guy who knows how to make bread is that you never want to exceed more than a 2% ratio of salt to the entirety of the dough mixture So basically, if you’re measuring 1000 g of flour, this means you can have up to 20 g of salt in the mixture🙃 I tried a different recipe the other day, and the guy that video said for every 2 inches of sub, I t’s basically about 1 ounce of dough which I thought was really solid in theory, but then, when it came time to bake, it seems like it should’ve been 1 inch for every 1 ounce because 12 ounces would’ve made a proper sub.
very nice. do i need to add melted butter and lukewarm milk in the flour? i've seen other recipes and they dont add these. does skipping these 2 ingredients mess up the bread?
It looks like you used granulated sugar in the video. But in the description box you list caster and powdered sugar. Can either of the three be used? Thanks for your response
I made really good ribs yesterday. Today I’m going to make sub rolls. Dinner is gonna be so freaken good. Edit. So I made these. I skipped the egg and milk topping and instead kept spritzing the top occasionally while final proofing with warm water while in my “proofing box”. Then before baking I topped them with an Italian herb and cheese mix. Freaking amazing.

So soft I could barely cut the roll I used last night for my meatball sub and I used a very sharp brand new knife lol that's how soft lol

What temperature did you bake at?
Good
Fine illustration / demo. Could u please mention approximately the weight, length and breadth (average) thanks
Looks yummy
Could you list the ingredients ? Thanks. Bill
Thanks for the recipe, I love Rolls. Is the recipe 2 tbsp butter, 2 tbsps oil added to dough, then another tsp oil added before proof?
pucrob the other teaspoon of oil is to coat the bowl and dough ball to keep from sticking during the proofing.
Thanks for the recipe! Can this be done without sugar?
You can put honey instead
Honey has more sugar than sugar lol. Try stevia, we use it for almost everything. That or monk fruit.
Flour protein how much percent and hydration value please?
if i want to make it with 250 gram flour i need to put everything half ?
Now I know why they are called rolls
How long are these rolls? Thanks.
Kya bread flour alag hota hi please jaldi answer dena
Update: Amazon has wheat gluten. Only need 1-1/2 Teasp per cup of all purpose!
Can I leave the dough for a day to rise? Will this be better/worse?
Make them a bit smaller to fit an air fryer or toaster oven. The full sized oven just overheats the rest of your kitchen.
Is all purpose flour ok instead of bread flour and which brand yeast you have used
How come you didnt let the yeast sit in warm water to reactivate and wake up
Could we use all purpose flour?
It looks like you used granulated sugar in the video. But in the description box you list caster and powdered sugar. Can either of the three be used? Thanks for your response
I used caster sugar not granulated sugar.
@@cooking-passion awww man I used granulated sugar. Well I will have to see how they turn out. Thanks for replying

No, a baguette is only water, yeast and flour. You can't have one recipe for all breads as their process are different.

What is the approximate length of the rolls when finished?
Can we use maida instead bread flour.
I feel like they're not chewy, i mean he didn't squeeze the bread in the video for a reason.
Can I use all milk instead water?
Instead of bread flour what i use?
I think the 3/4 cup water was too much hydration. Should start with 1/2 cup and add more as needed
