Recipe
800 g. AP flour
400 g. Starter or discard
10 g. Salt
20 g. Lard
5 eggs
Put all ingredients in food processor and mix until combined then take it out and kneading with hand until the dough smooth, if the dough sticky adds more flour, the dough shouldn’t be too soft, rest the dough in the fridge for 30 minutes and cut in small portions then use a lot of flour to make sure the dough is not sticky. Rolling out flat and using pasta machine to make sure the pasta is consistency smooth and thin. Dry the pasta with the fan at room temperature and make sure spread them out evenly, let the pasta dry 20-40 % then put in plastic bag and store them in the freezer. Take it out and cook in hot water immediately no need to thaw it first. The flavor is so amazing. 😻 Bim
