We just don't eat too much because these can be heavy and filling. Hopia and buchi have Chinese origins and is a favorite afternoon snack with a warm beverage, but you can eat this any time and also with cold drinks.

For gelatin-like consistency, the traditional ingredient is agar gel from seaweed. E.g., in a popular dessert called gulaman.

Water melon have hundreds varieties..it’s depend you want to buy but planting of water melon only summer..if you plant rainy season the water melon become pale and not sweet or they crack the skin…
That’s the reason if summer water melon are so sweet…before we plants water melon three varieties..after harvesting of rice we plant water melon ..because it’s sunny water melon they love it…

At least you guys tried those local treats which is commonly eaten during birthdays and Christmas celebrations.. If you can try other local rice cakes such as Biko, Kuchinta, Ube Halaya... I guess you've tried Puto and bibingka already.

Not sure about your experience with melons. I'm from Manila but whenever I buy watermelon or cantaloupe (which we also call Melon here), they're always sweet as long as they're in season which is usually in summer. But glad you like the Cassava cake. For me personally though, Don Benito's isn't the best. There's a stall in our church's canteen that sells it which to me tastes way better. It's denser too. :)

Cassava is not made from gelatine, it is a rootcrop like potatoes, taro, and Ube( purple yam). It also can be made into flour, called Cassava Flour! 😋
