Horchata (Orxata)is a popular rice drink from Mexico that is made from easy-to-find ingredients that are almost always available in your kitchen: rice, cinnamon and milk. Almonds are also added but may be left out if you prefer. This is a very delicious and refreshing drink that can be adapted to suit your preferences. Want a less thick drink? Add more water or more ice. Want a less sweet drink? Reduce the condensed milk. Want a sweeter drink? Add sugar.
HOW TO MAKE HORCHATA | HOW TO MAKE RICE MILK DRINK WITH CINNAMON | HORCHATA DE ARROZ
Ingredients:
1 cup uncooked rice
1 can evaporated milk
1 can condensed milk
1/4 cup almonds (optional)
2 cinnamon sticks (broken into smaller pieces)
9 cups freshly boiled water (4 cups + 5 cups)
1/2 teaspoon vanilla
Method:
1. Wash and drain the rice as many times as needed.
2. Place the rice, cinnamon and almonds in a bowl.
3. Add the 4 cups of water.
4. Cover the bowl with plastic wrap or a dish cloth and allow the mixture to soak overnight in the refrigerator, or for at least a few hours.
5. Blend the soaked mixture ( in batches if your blender cannot handle it all at one go). Try to remove as much of the cinnamon as you can first.
6. Strain the mixture using a fine mesh strainer, a nut milk bag or a fine muslin cloth.
7. Add the evaporated milk, condensed milk, vanilla and the rest of the water.
8. Stir well.
9. Serve with ice. Garnish with powdered cinnamon if you prefer.
Notes:
1) Add more or less water according to your preference.
2) Add sugar to taste if you would like a sweeter drink.
