I usually will add my flour with the seasoning and then sear. The flour gets that toasty flavor and you dont risk getting lumps of flour in the end. That really looks so good! Also, for an Elite finished product, get the skin off the tomato by quickly blanching in boiling water(score the bottom for ease beforehand), cool in cold water and peel, then add to the stew.
