sometimes they ring/hum even if you don't touch them. you can cancel the vibration with resting finger 1 (the index) on the strings (without fretting) while fretting with the other fingers, or use the base of your thumb from the picking hand to the same effect, or pluck instead of pick and rest your thumb between the E and A strings. it's been four years since you asked, I'm curious to know if you found a solution that works for you :)

+Kai Tseng Palm muting mostly, neck mic up and bridge mic down, lots of mids and not too much lows on the equalizer... Older strings or lighter ones might help as well.
